This is the BEST bruschetta I have ever tasted! I have ordered bruschetta many times in restaurants and this recipe beats them all. The topping is so moist, flavorful and succulent. It was a big hit at our New Years Eve party. I made some slight "tweakings" to make it better. First, I used my bread machine to make homemade bread (I used the dough setting and then shaped the dough into a long, thin baguette and baked in the oven). I also marinated the topping for a few hours instead of 10 minutes as directed. Finally, I brushed the bread slices with a little olive oil before broiling for extra flavor and texture. Otherwise, I did not change the essential recipe. This recipe is one of my new favorites and I know I will make it again and again.
