Chantal's New York Cheesecake

This is really the type of cheescake you would get in a deli or at Sam's Club. Mine came out pretty creamy. I reduced the sugar to 1 cup and baked it at 400F for 15 min then reduced it to 225F for another 50 minutes. I find that if you bake at 350 or even 325 it would crack and the top would get really brown. I also baked it in a waterbath. I would have given it 5 stars but I like a lighter cheesecake. Thanks for the recipe!

Tasted kind of bitter. Perhaps there was a tad too much baking powder? But without the baking powder they probably wouldn't have rised like they did.
