Taco Seasoning

This is the recipe we use now for tacos, since with my food allergies most commercial packets are not ok. While this is supposed to be salt free, I found adding 1 tsp of salt made this the best taco seasoning.

Donut Muffins

Yummy. I made a few changes. I substituted soy egg nog for the milk since that was what I had on hand. I also changed the spices. Instead of the nutmeg I used 1/2 tsp Cinnamon, 1/4 tsp nutmeg and 1/4 tsp ginger.

Passover Sponge Cake (Plava)

Went over great. I made a mistake with the sugar and used a 1/2 measure when I thought it was a 1/3 measure. I ended up using 2 cups of sugar instead of 1 1/3 cup. Cake came out great. Also served pureed raspberries, fresh raspberries and whipped cream

Easiest Spicy Cod

Maybe I shouldn't have used hot salsa. Likely would enjoy better with medium. I baked on a bed of crushed tortilla chips sprinkled with cayenne pepper. Which didn't help the heat rating. My husband topped his with cheese. I served this with tri-color corn pasta.

Maple Muffins

NIce Light muffins. I would have liked them to be sweeter, next time I make them I'll be adding brown sugar. I also made them with vanilla soy milk instead of milk. they froze and reheated nicely

Chocolate Chip Cookies I

I picked this recipe because we don't cook with butter in my house. The intent with these is to freeze the batter and bake the cookie dough into cupcakes. I made a few substitutions: used 1/3 cup vanilla soy milk instead of the egg because we were going to be eating the dough raw Doubled the amount of vanilla Instead of shortening, I used 1/2 cup of coconut oil. The coconut oil gave the dough an amazing coconut flavor. Not only did I eliminate trans fat from the recipe but I increased the omega 3 and 6 fatty acids. It almost makes the dough healthy.

Cake Mix Cookies I

A bit dryer than I would have hoped. I mixed in some pumpkin pie spice to part of the batch and those came out much tastier
