Cake Mix Cookies VIII

Yummy and easy! Very chocolatey. It made double the amount indicated. I used margarine instead of butter; added 2 T oil and 1 t vanilla as others mentioned. Also used a plain chocolate pudding in the mix type cake mix.

Almond Puff

5 stars plus! This is a really delicious pastry. I used margarine instead of butter as indicated in the body of the recipe. Don't let the lack of sugar scare you. It's perfect. The glaze recipe is missing 1 T of milk to thin it down properly. Add that to the glaze. I sprinkled mine with red and green decorator sprinkles to make it look festive for the holidays. Yummy! My favorite of the Christmas cookie plate this year!

White Chocolate and Cranberry Cookies

Wonderful flavor. I used half butter and half margarine. Would maybe use all margarine to prevent spreading next time. Didn't have brandy so used 2 t of brandy extract and they were delicious.

Cinnamon, Spice and Everything Nice Cookies

These had a nice flavor. Don't be afraid to put the 2 T of vanilla in, like I was; it's balanced by the spices. However, this was not the molasses spice cookie I thought it would be, but a light batter. The dough was not at all stiff as mentioned. It was too soft to roll. I added an extra 1 c of flour and chilled it. I also did not need to flatten them as they spread when cooked. Cinnamon chips were impossible to find in my area. I substituted butterscotch. I'm sure the cinnamon would be great, but I spent 2 hours and didn't find them.

Swedish Angel Crisps

These were good. Buttery and tasty. I ended up using 3/4 c of nuts and used green sugar to make them pretty for my Christmas cookie plate.

Snowballs II

These were good. I like the candy cane idea, but the topping didn't stick well with the candy cane bits in it. I would either make them very FINELY crushed (i.e. candy cane dust) or maybe try putting the crushed candy in the cookies...

Pecan Filled Cookies

These were rich, buttery, and chewy. Very yummy! They spread quite a bit and were flat, not like a "thumbprint" cookie that holds its shape, like I expected, but wonderful nonetheless. I used the 1/2 teaspoon measure for making the indent and filling and that worked super.

Caramel Shortbread Squares

These were awful. The crust was dry and crumbly. The caramel was hard as a rock. I couldn't even cut them. I followed the recipe exactly. I ended up tossing the chunk away. It was a waste of good ingredients.

Pumpkin Roll I

This was excellent. I left the nuts out after reading the other reviews. Mine needed to cool longer than 20 minutes before filling. It was moist and light without having to separate the eggs. Yummy!

Antipasto Squares

This was very yummy, just a bit on the greasy side. I took it to a buffet and they were all gone by the end of the evening. My family tasted them while I was cutting them up and loved them. I used only a 7 oz can of peppers, drained them well and patted them dry with paper towels. Very tasty!

Peanut Butter Frosting

I tried this recipe for my son's chocolate birthday cake. It was really awful. I followed the recipe with the suggestion of adding more peanutbutter and less powdered sugar. It was still terrible. The taste was fine, but the texture was like greasy, gooey fudge, not nice, fluffy frosting.
