Fluffy French Toast

Loved this. I used two day old French bread baked at the local market that I sliced thick (about an inch). I sprinkled a little extra cinnamon on one side of the slices when I put them on the non-stick griddle and they were perfect. I used an electric mixer to mix the ingredients. This tasted like the French Toast my mom used to make. My 3yo loved it too! Of course pure Vermont maple syrup heated and drizzled on top sealed the deal. :-)

Beef Barley Vegetable Soup

I used leftover steak and threw everything in a pot (I used a 28 ounce can of diced tomatoes instead of same size chopped stewed tomatoes) and let it boil for an hour then let it simmer on medium-low heat for another hour or more until it was time to eat. It was delicious. I served it with homemade corn bread. :-)

Blueberry Pie

Changes to make to ensure the pie works well - which are actually a different recipe: 5 cups blueberries, 3 TBSP flour and 1/2 tsp cinnamon or 2tsp of grated lemon peel. Let is cool before cutting into it and there will be no problem with it setting.

Easiest Falafel

It was pretty good but there was not a lot of flavor. After reading reviews, I added less oil to the mixture and made sure the oil in the pan was hot (bread crumb dancing on top of oil when added to test for heat) and I was careful to let them cook for a while before flipping them. The one I didn't wait long enough for kind of got smooshy and almost fell apart. Ate them with pita bread and spicy mayo (srirachi, garlic, mayo combo) and it was good but not outstanding. I probably won't make them again.

Caramel Pecan Pie

I have been making the same delicious pecan pie for a very long time and decided to try something new. This is wonderful. I used an entire 10oz bag of pecan halves and I really think it's perfect. My husband is not a big pecan pie fan and he really liked the pie. I will definitely make this again.

Fluffy Pancakes

We really enjoyed the pancakes. The batter didn't fizz up like other reviewers noted but it was super thick batter that made me think of yellow cake batter. The thick batter worried me but they came out great. I used dry buttermilk to make the buttermilk instead of using vinegar in milk to create sour milk.
