Roasted Butternut Squash Soup

super great! did the squash in the butter until brown, took it out, browned the other veggies and returned it all together with the broth and spices until tender. i used my stick mixer to blend it up. i added a bit of parmesan. sooo yummy and easy!

Broiled Tilapia Parmesan

great! i added tabasco to mine for some kick. i also left out the butter entirely and the taste was still wonderful without the fat. served with roasted fingerling potatoes and steamed spinach. will make again for sure!

Risotto with Asparagus

Very good! I added some garlic when I sauteed the onions. I also used probably another cup or so of broth b/c it was too crunchy after recipe's amount was added. I seasoned it with some extra thyme. I cooked the asparagus IN the chicken broth and added some lemon juice after cooking for a little freshness. I also added some chopped parsley right before serving. YUMMY! Would recommend and will make again!

Awesome Baked Sea Scallops

Really great! Fast, easy, delicious. Doesn't get any beter. I didn't make any changes and it was delicious. Will definately make again!

Cheesy Catfish

Great with a few changes. I omited the milk and instead added a little lemon juice and fresh garlic. I used breadcrumbs instead of flour. I also used talapia as catfish is so..well..fishy! I baked at 350 for 15 minutes and then broiled it for another 3 or 4 to get a crisp top. Very yummy! My husband and 2 year old both liked it lots!

Oatmeal Peanut Butter Bars

Good snack! I will use pecan next time instead of the sunflower seeds. I left out the coconut (only because I discovered I didn't have any) and it was definately sweet enough without it. I'll cut back a little on the oats next time and add a little almond extract instead of vanilla. Worth making! Kids loved it!

Magic Cookie Bars II

Very easy and good. Next time I will add another cup of graham crackers or maybe use some pretzels. It would be easier to cut and eat if the crust were thicker. I also substituted peanut butter chips for the butterscotch...yumm!
