Cream Cheese Cookie Cups

Had to give this 5 stars for several reasons. They are super simple to make. Require very few ingredients. And they are just adorable! They are rich, but what isn't rich with cream cheese in it!?! I followed the recipe, but doubled the filling so I could use the entire 18 oz. cookie dough roll. This made 24 mini cups. And I also sprayed my pan with baker's joy before putting the dough in. Out of curiosity I added cocoa powder to a portion of the cream cheese mixture to see how they'd taste with chocolate cream cheese filling, and I liked it alot:) Like the previous reviewer, I topped with mini choc chips. Will try m&m's next time like the submitter suggests. Will be making these again. Thanks Rachel!

Raspberry Chipotle Sauce

This was easy to make, and tasted really good. I may cut back next time on the apple cider vinegar, just because we really tasted it, more so than the other flavors. But we still enjoyed it alot! I used one jumbo jalapeno and the heat was just right, and also used frozen raspberries. (The fresh ones at the store looked awful!) Made this to go on grilled chicken sandwiches with jalapeno havarti cheese, and this sauce complimented it nicely! Think it'd be great over a block of cream cheese with crackers, and can't wait to try it on other meats. Thanks Holly :)

Strawberry Coffee Cake

I doubled the recipe and put it in a 9x13 dish.. I cooked it about 30 minutes and it was just right. Great tasting, and very moist. I didn't double the topping and I still had enough.(I also didn't use the pecans) Great way to use up my strawberries that were about to go bad :)

Pumpkin Frozen Yogurt

Despite mixed reviews, I was excited to try this.. especially since I love all of the ingredients listed. Sadly, it's something that I won't make again. It was bitter and left a horrible taste in my mouth. I used pure maple syrup and followed the instructions to a "t"...ended up throwing it away. So sorry.

Egg-White Crepes

Absolutely delicious! And actually healthy! The fillings/fruit possibilities are endless with these. I didn't put the oil in but used 2 tsp of applesauce like someone else suggested. GREAT recipe!!!

Delicious Raspberry Oatmeal Cookie Bars

These were excellent! I love finding recipes that don't need tweaking, and this is one of them. I went ahead and lined my pan with foil, and created handles on each end. After they cooled overnight, I took them out using the "handles" and it made the task of cutting them much easier. I had no issues with crumbling, and they looked so beautiful. Thanks for a super easy and delicious recipe :)

White Chocolate Cranberry Granola Bars

This was my first time to make granola bars, and I am more than pleased with the outcome of this recipe! In the middle of mixing up everything, I realized I only had instant oats instead of old fashioned, and used them anyway. It didn't seem to hurt the recipe at all. I lined my pan with nonstick foil and created handles on each end. When they were done, I was able to lift them out of the pan easily, and then let them cool on a wire rack. They were easy to cut, and are super delicious.. I can't stay out of them! I'll absolutely make this recipe again :)

Artichoke Stuffed Mushrooms

These were amazing.. I could have easily eaten them all by myself for dinner ;) ;) I had filling left over and we heated it up the following day as a dip, and it was fabulous! We truly love this recipe. Thanks Anita!

Quick Caribbean Quesadillas

These were soooo good! I had to use apricot-pineapple preserves (couldn't find just pineapple) and I made my own honey mustard. I didn't measure anything, but I'm pretty sure I used more of the pineapple mixture and cheese than what it calls for. These aren't for everyone, but we thoroughly enjoyed all the flavors in this dish :)

White Chocolate Blueberry Cheesecake

I made this last night and couldn't wait to cut into it this morning.. It is delicious and my family loves it! I baked it for an hour at 275 degrees and it was very loose in the middle. So I turned the temp up to 300 and left it in there for another 20-25 minutes and checked it constantly.. The cheesecake and blueberry sauce is awesome, but my crust came out VERY chewy and even a bit hard in some places.. I'm sure it was something I did to it! Hopefully the crust will be better next time.. Will make this again and again!!

Pineapple Salsa

We made this to go over grilled chicken, and it was very good. I think for our own personal taste I will use less beans next time (and I do love black beans). I just liked the other flavors better and wanted more of them! Hubby even said he'd like this as a side dish. Will be making again!

Mango Blueberry Muffins With Coconut Streusel

Wow, these are incredible! The combination of the mango, blueberries, and coconut on top is amazing! The texture of the muffin is light and fluffy and just melts in your mouth.. Sooo delicious! I made no changes to the recipe.. and it's truly perfect as is! Love love love it :) Thank you geranium !

Coconut Walnut Biscotti

First time making biscotti, and I am so impressed with how these turned out! They are incredible.. Coconut flavor is just right. I did use almonds, and I think they pair perfectly with the coconut. Next time I'll take more time rolling the log, so they all come out the same size.. Mine weren't the prettiest ;) But still wonderful! This is truly a delightful and easy recipe that I'll be making all summer! (oh, and I drizzled with white chocolate, but they are great without it)

Melt In Your Mouth Blueberry Cake

This cake is incredible! Yes, it does require a little more time when preparing it, but it's completely worth the couple extra steps. I followed the recipe exactly as written, and cooked mine for about 45 minutes. Beautiful and moist. The flavor was just perfect, and the little bit of sugar on top added just the right amount of sweetness. If I could rate this more stars I would.. This one is definitely worth taking the time to make. Thank you IRENED for a very special recipe :)

Chicken Crescent Casserole

Hubby requested this and it turned out great. I used fresh mushrooms and let them cook with the celery. I also used more celery than it called for. Left out the almonds because I didn't have any.. He loved this and it even tasted good as leftovers.

Roasted New Red Potatoes

Excellent recipe! This is my new favorite way to eat red potatoes. By only using the olive oil, salt, and pepper, we were able to taste and appreciate the true flavor of these delightful little potatoes.. instead of covering up the flavor with lots of extra spices and seasonings. This recipe is great as is. Will absolutely make these again soon.

Peaches 'N' Cream Muffins

3 1/2 stars..I normally don't make recipes with few/low ratings.. but this one sounded like it'd be something I would like. I didn't change any of the ingredients, and followed the instructions to a "t". I really like the texture of the muffin, and I also like the chunks of cream cheese and peaches in it. But the rest of the muffin is flavorless. I can't taste any cinnamon, and I think it could benefit from some vanilla extract and maybe other spices... Even a cinnamon/sugar topping might help these. Overall, this is not a horrible muffin.. Just needs a little tweaking! :)

Black Bean and Couscous Salad

What a delicious recipe!! Keeps well in the refrigerator, and gets better as it sits. I'm not crazy about green onions, so I used much less than it calls for, and only 1 can of beans and it still turned out great. Really a flavorful, healthy dish that I'll make again soon!
