Egg-White Crepes

Absolutely delicious! And actually healthy! The fillings/fruit possibilities are endless with these. I didn't put the oil in but used 2 tsp of applesauce like someone else suggested. GREAT recipe!!!

Chili I

Great basic chili, and easy to throw together. I replaced a can of kidney beans with a can of pinto beans. I think next time I'll add more seasonings, and will use less of the crushed tomatoes. Still a good recipe, just needs a little tweaking.

Angel's Chunky Chicken Salad

Just what I was looking for! Simple ingredients, nothing too fancy. I used chicken breasts that I boiled the day before, and didn't add any onion to the mixture. This was delicious!

No-Guilt Zesty Ranch Dip

Whole Wheat Biscuits

First time to ever make biscuits from scratch, and these turned out wonderfully. They were very moist and fluffy. I had to use regular milk, but they were still great!

Quick Caribbean Quesadillas

These were soooo good! I had to use apricot-pineapple preserves (couldn't find just pineapple) and I made my own honey mustard. I didn't measure anything, but I'm pretty sure I used more of the pineapple mixture and cheese than what it calls for. These aren't for everyone, but we thoroughly enjoyed all the flavors in this dish :)

Simple 'N' Delicious Chocolate Cake

I used this recipe to make cupcakes, and it made 12 exactly. Moist and delicious.. Possibly the best cake recipe I've made from here so far. I changed nothing about the recipe except the cooking time (cupcakes only took about 20 min), and the results were fabulous. I topped with Satiny Chocolate Glaze.. but this cake really doesn't need anything on top. I'll be making this one again very soon!

Gooey Chip Bars

Quick, so easy, gooey, and good! I left out the nuts, and added a few white chocolate chips on top. (Next time I won't, the semisweet chocolate chips are enough!) Baked for around 22 minutes, and they seemed to be just right :)

Rich Chocolate Brownies

Yes, these are definitely RICH when you include the frosting. The brownies alone are moist and have just the right amount of chocolatey sweetness.. However, the frosting made them almost a little too sweet, even for me. But still, a very easy and basic recipe that I will most likely make again. If you have a major sweet tooth, these are for you ;)

Dilly Chicken Sandwiches

Such a delightful sandwich in the middle of winter.. I used quite a bit of fresh dill (we love dill!), and added more lemon juice than the recipe called for. I also used wheat bread instead of french. The cream cheese spread is really delicious and adds something special to this chicken sandwich. I'll be making this one again.

White Chocolate Blondies

After reading several mixed reviews, I almost didn't make these. But I'm glad I did, because they turned out fantastic! I did use white chocolate chips instead of the semi-sweet.. Just because hubby prefers white. Other than that, everything stayed the same. Time and temp were perfect for me and they fit nicely into a 11x7 pan. Thanks Jenn :)

Apple Raisin Cakes

I must admit that I was not expecting too much from these.. but I was really impressed once I tried one! They aren't overly sweet, and I liked that about them. VERY filling and perfect for breakfast. I served with just a sprinkle of confectioner's sugar. If you are looking for a healthy, low-sugar breakfast, these won't disappoint you. :)

Black Bean Chili

I have made this with fresh ingredients, as well as frozen and canned. No matter what, it is always amazing! Hearty, healthy, and very filling. I've used a can of Rotel to take the place of the jalapeno if I don't have one. I can't say enough good things about this recipe!! I'd give it 10 stars if I could :)

Low-Fat Blueberry Bran Muffins

By far the best bran muffin I've had on this site. I couldn't find wheat bran at our grocery store, so used bran flakes instead. I did crush them up a bit before soaking in the milk. Other than that substitution, I followed the rest of the recipe exactly as written. Such a moist, not too sweet treat... And it's even healthy! I think these would be great with other berries and dried fruits. Definitely a keeper in my house :)

Mock Tuna Salad

I'm really impressed with this one. Doesn't taste like tuna, but still really good. Its one of those that you can add to to suit your tastes. I added finely sliced celery, little bit of lemon juice, and it was a great medley of flavors. Surprisingly, hubby really liked it..but he still doesn't know what was in it ;) ;) I will absolutely be making this again.. and often!

I just fell in love with these cookies!! So delicious, and easy. Nothing needs to be changed in this recipe. The store was out of white choc chips, so I just coarsely chopped a 6 oz block of white chocolate. Perfect! :)

Pecan Pie Bars I

These were awesome! It was my first attempt at any pecan pie like dessert. To fit into a 9x13 glass dish, I cut the recipe to 24 servings. (Used 3 eggs not 2 3/4) The bake time and temp were perfect for me. I used a very generous amount of non-stick spray, and these popped out perfectly. I did make sure to go up the sides of the dish with the crust. When I took these out, the center was jiggly, but it set later on in the day. Easy and a huge success for me :) :)

Tater Tot Casserole II

My husband wanted me to make this and he really enjoyed it. I didn't care for it much, but just because I'm not a huge fan of tater tots. I added 1 lb of seasoned ground beef, and put it on top of the tots. Easy, and inexpensive. 4 stars because hubby devoured it :)

Smoked Cheese Ravioli

Perfect. We love this dish, and I really love the simplicity of it! I didn't have parsley, so I added a sprinkle of dried oregano. Quick, flavorful, and elegant. You can't go wrong with this one. Thank you Amber!
