Easier Chicken Marsala

Reviewed: Oct. 14, 2006
Fantastic and easy. Be sure to use a good marsala wine. My husband likes it better than some of the dishes he's had in the italian quarter of our city.

Chocolate Lovers' Favorite Cake

Reviewed: Oct. 14, 2006
This cake looks beautiful and you certainly don't need to frost it - just some strawberries and powdered sugar. It is easy to make but I don't think it is worth all the fat and calories. Once guests knew what was in it no one ate it and I threw half away. It spoils quickly since it is so moist.

Slow Cooker Chicken Cacciatore

Reviewed: Oct. 14, 2006
Easy recipe but I did change it as it seems everyone else did too. I mostly followed the suggestions of KMILTI and it came out very good. I'd give her version 5 stars.

Italian Wedding Soup I

Reviewed: Oct. 14, 2006
This is a great recipe. I have made it several times and usually make double the meatballs, bake them, and then freeze half for the next time. I also use acini di pepe pasta and add shredded, cooked chicken, and use low sodium or homemade chicken broth. Fantastic.

Baked Ziti I

Reviewed: Jun. 4, 2006
I prefer my dishes with a little more "zip." I will likely try again with hot sausage instead of some of the meat in the sauce (I would use my own instead of jarred) and would try ricotta instead of sour cream. My Italian husband was horrified. Beware - this makes enough to feed an army.

Grandma Johnson's Scones

Reviewed: Dec. 27, 2005
I had some trouble getting the dough to come together - maybe since I used dried cranberries and white chocolate chips. There were no complaints from the family though!

Pizzelles II

Reviewed: Dec. 27, 2005
Fantastic. My Italian inlaws like them better than their own! I use vanilla instead of anise - just personal preference and then dust them with powdered sugar. Addendum: I use real unsalted butter (not margarine) and a good real vanilla and I have never had a problem with them not crisping up and have never had leftovers! I have made this recipe dozens of times over the years.

Cathy's Banana Bread

Reviewed: Nov. 29, 2005
I made one 9x13 pan and it was certainly moist but it took almost 1 hour and 15 minutes to cook and it didn't rise well - it was very dense. I sprinkled the top with sugar before baking for a little extra sweetness. Overall a decent bread but not the best I've ever had.

Jamie's Minestrone

Reviewed: Nov. 29, 2005
I halved the recipe but still used 2c of chicken stock and 1 cup of water since I cooked the pasta in the soup before I served it. I used canellini beans instead of kidney and didn't have any zucchini on hand. I'd recommend using the wine as well.

Chicken Pot Pie III

Reviewed: Nov. 21, 2005
I used leftover chicken and a can of cream of chicken and a can of cream of celery (both reduced fat and sodium) and used only 1/2t thyme and it was fantastic. We restrained ourselves from eating it all at once so we could have it again tomorrow. Thanks for an easy and great recipe.

Grilled Salmon I

Reviewed: Nov. 17, 2005
Quick and easy but not as much flavor as I expected. I used OJ instead of water but will likely switch to olive oil and add garlic the next time I make it and try to marinade more than four hours.

Simply Lemon Baked Chicken

Reviewed: Nov. 14, 2005
The meat itself was ok but don't even try to eat the skin or make a gravy with the drippings. Way too salty! I cut the salt to 1.5T and had a 6.5lb chicken and it was inedible. Sorry... I should have listened to my instincts.

Fabulous topping and very easy to make. More like a dessert than a side dish but everyone had seconds!

Apple Crisp II

Reviewed: Oct. 3, 2005
So easy and delicious that my guests actually asked for a doggie bag! I followed other reviewers suggestions and doubled the crisp and decreased the sugar on the apple filling. I also never add water to my fruit fillings. Fantastic.

Dirt Cake I

A favorite of my dh but not for those watching their waistlines. A good treat but no need to add the butter and one package of sandwich cookies works for my dish - don't try to use low fat! You can use lower fat cream cheese and whipped topping but not fat free.

Teriyaki Chicken

Simple to prepare but I did thicken the sauce with some cornstarch, added some pineapple and used it over broccoli and rice. I will likely make this again.
