Best Spanish Rice

The first time I made this my first thought was SALSA?I had Pace,and I usually don't like to cook with something sweet tasting,which I think alot of jar salsa and spaghetti sauce is.But it didn't end up tasting like salsa was in it,or sweet.I was really surprised how much I liked it.I do have another recipe I like too,more work.But I will make this probably more than the other.

I can't believe I am the only one who thinks they were way too sweet.I even used 1/2 cup less sugar.I should have followed my instincts.They were pretty though.

Best Carolina BBQ Meat Sauce

I had never tasted a carolina mustard,vinegar based sauce. I made a double batch,but with only 1 1/4 cup mustard (that is all I had) We love it. I had slow cooked a 7 lb pork shoulder. Next time I want to smoke the pork instead of slow cook. But it was really good anyway. I might try it with a little more mustard too,even though it was great as I made it.

Chipotle Mac and Cheese

I made this for our Memorial Day family barbeque.Everyone loved it. I used 24 oz.macaroni and doubled everything else (except the flour.) I prepared it the night before.And when I took it out to warm up a little before putting it in the oven....I took a little taste and thought NO ONE will like this.But after baking it for over an hour and a half (it was a big pan) it was flavorful.

Cream Cheese Coffee Cake II

I love this recipe !! I like alot of filling so I doubled it.(using 16 oz of cream cheese,and 3 tbls lemon juice,6 tbls conf. sugar) And I had the nuts on the bottom of the pan. I don't like really sweet cakes,and this was perfect for me. If you like really sweet fillings, add more sugar.

Baklava

I tried this for the first time for my 84 yr old mother for Christmas.I was nervous,having never worked with phyllo dough.I decided to go with Sara Bear's tips,only making 1 1/2 times the sauce.(3/4 cup water,1 1/2 cup honey.) and with a little sugar in with the nuts.She didn't say if she cut the sugar ,since there was so much more honey.So, I think I only put about 1/4 cup sugar in the syrup.I didn't know if that would make the sauce too thin.But I refrigerated the sauce for a couple hours til I got around to doing the rest.Well, my mother said it was as good if not better than any she had eaten..I was so glad.Oh, and I baked it at 325 for 50 minutes.But it depends on your oven.I have gas....and I know electric can burn faster.

Fry Bread Tacos II

I was hesitant to make the fry bread...I love corn tortillas,and my husband likes flour.So I came across this today.I decided to try it even though I couldn't find a thermometer.Fry bread for him, corn tortillas for me.Haaa! I was so shocked how good these turned out...the corn were untouched.Light, fluffy wonderful.Maybe some other reviews didn't knead enough.I did it in my mixer for 6 minutes.I can think of other things these can be used for.I haven't been this excited about a new recipe in years.I just never heard of this before.

Cinnamon Coffee Cake II

OMG, I was surprised this was sooooo good,and very moist.I used what I had on hand.Butter Pecan cake mix and french vanilla instant pudding.I'm sure it's great with other flavors too.I also used a bundt pan (my slightly bigger one) and put half the batter,then half the cinnamon nut mixture on that.when I took it out of the pan I put it back right side up with the nut mixture on top.

Mom's Rum Cake

Soooooo moist and the rum is very mild.I haven't done the glaze quite right yet,but it doesn't matter...it always tastes wonderful!! 6 stars if I could!!
