Herbed Chicken Nuggets

Wow! These are great and not bad for you at all compared to normal chicken nuggets. I think it took longer to cut the chicken up than anything else. I used a Italian herbs mix rather than the herbs listed. Also, I did not add oil to the dry mix, I drizzled the nuggets once they were on the cookie sheet. I think that I might try breading and freezing them then pulling them out to cook at my convinience. UPDATE: I now make a double batch and freeze half. Once defrosted, I make them exactly the same and they turn out great. My husband is usually a snob about frozen meat and he was surprised to hear (after he finished eating) that they had been frozen.

Quick Brownbag Burritos

I made these and immediately froze them (wrapped in wax paper and then put in freezer bag). I pulled them out, left them in the fridge overnight to defrost and then heated them in the over at 250 for about 35 minutes. They were great. Didn't taste like they had been frozen at all.

Simple Oven Fries

These were great! I put them in at 350 because I was cooking chicken at that temp., it didn't really make a difference except that they took a little longer. One note, try not to get the extra oil onto the cookie sheet, I dumped the fries onto the cookie sheet when they were all coated and the fries that were sitting in more oil weren't as good as the others.

Unbelievable Spinach Calzones

These were good. The hardest part is working with the dough. The dough needs to be at room temp, it is so much easier to work with when it's not cold.

Skillet Fried Corn

I've had numerous people ask for this recipe. It's unbelievably simple & so great. I used a center cut bacon to reduce the calories a bit & drained some of the fat. I have used green pepper as well as a mix of yellow/red/orange peppers, both are great!

Monkey Bread V

Wow!! I have made twice now and everyone that's had it, loves it. I used frozen white bread dough. The second time, I let it defrost, cut it (I skipped dipping my scissors in water and had no issues), rolled it in sugar and put in the fridge until the morning. I just used a 9x13 pan and a 7x9 pan, there was a lot! When I pulled it out in the morning it was huge!! I followed the rest of the directions exactly and they came out great. What an impressive thing to make for a brunch which is still super easy. I love recipes that I can do most of the work in advance!

Very Easy Mushroom Barley Soup

I really liked this soup. I used baby portabello mushrooms & next time I will cut them a little smaller. It's not a hugely flavorful soup but it was good with some fresh bakery bread.

Crispy Eggplant with Spicy Tomato Sauce

I thought this was pretty good & super easy. I will make again. It doesn't really compare with fried eggplant parm but it's a great alternative for a lighter meal.

Kumquat Marmalade

I let the fruit soak for about 18 hours. Then I let it boil for a WHILE! It never did gel but it tastes great. Certainly a great way to use the kumquats no one wanted to eat.

Strawberry Spinach Salad I

My husband told me the salad was the best part of the meal & that's saying a lot coming from him. YUM!! I didn't want to deal with an fresh onion so I used onion powder. Next time I will probably try fresh onion & less sugar.

Ooey Gooey Breakfast Rolls

These were awesome. I'm not sure what the pudding mix adds but they were great! I prepped them the night before, pulled them out to come to room temp and then cooked them off in the morning. Very good and really pretty easy.

Sweet Restaurant Slaw

The onion definitely stood out in this slaw but it was good. I made it early in the day & it was plenty juicy by dinner. In fact, I think you could cut down on the dressing a bit, save a few calories & it would be just as good.

Orange Marinated Pork Tenderloin

I bought a pork roast & it took about an hour, I used the meat thermometer to be sure when it was done. The pork marinated for a few hours, it was very moist. Everyone liked it & it was very easy. I did boil the sauce down for a bit but we didn't love it, I liked it much better without the sauce.

These are great & very easy. I baked the crust for 6 minutes before I added the meat/cheese. Also, I dried the red pepper on paper towels before adding. Mine was not soggy at all.

Brownie Mallow Bars

Wow! These were awesome. I only had large marshmallows so I quartered them. Also, I put the brownies in the fridge for a little bit before I made the topping and it was so easy to spread. To serve I but them into small squares since they are very rich. Everyone LOVED them!
