Quick Brownbag Burritos

I made these and immediately froze them (wrapped in wax paper and then put in freezer bag). I pulled them out, left them in the fridge overnight to defrost and then heated them in the over at 250 for about 35 minutes. They were great. Didn't taste like they had been frozen at all.

Apricot Glazed Chicken

This was OK. I would not make again without a few changes. I think that next time I will flour and sear the chicken and then pour the sauce over the top.

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are delicious! Even better the next day. I will alternate my stand-by recipe and this one. I used mini chips because that was all I had and toffee chips. Also, I did not sift the dry ingredients, I just added 1 cup flour with 1/4 tsp salt and baking soda, mixed and then added the rest. One less bowl to clean!

Awesome Carrot Muffins

These were very yummy. I used a little nutmeg with the cinnamon. Next time I will try with a little less oil. Made these again with the following revisions: 1 cup all purpose flour and 1 cup whole wheat flour, 1 tsp baking soda, 3 tsps baking powder, 1/4 cup oil, 3/4 cup applesauce. I poured 1/4 cup oil into a measuring cup then added the applesauce until the mixture reached the 1 cup line, much easier than doing them separately. Also, I cooked the muffins for 20 minutes and they came out perfectly moist. These turned out great, I will absolutely make again with these changes. Thanks.

Unbelievable Spinach Calzones

These were good. The hardest part is working with the dough. The dough needs to be at room temp, it is so much easier to work with when it's not cold.

Oven Fries

These were very good,, my husband loved them. I made with olive oil, sugar and seasoned salt. Also, I microwaved the potatoes first to soften them and that cut the cook time down to about 30 minutes.

Apple Cole Slaw

I used a bag of broccoli slaw and added the apples and the dressing. This was delicious. We had guests for dinner and we were scraping the bowl. So easy and flavorfull.

Jean's Homemade Chicken Noodle Soup

this soup was very good, I've never made chicken soup before and this was a good one to start with. I used the skinny egg noodles which cook quickly so the veggies needed a little more time to cook but other than that the soup is great. I added kosher salt and italian seasoning.

Candy Cane Cocoa

I made this for a brunch and everyone loved it! I had to make 3 batches. Will definetely make again. You do not need to break the candy up too small, it will melt if you heat the hot chocolate slowly on the stove top.

Bacon and Potato Soup

Soup was great. I mashed the potatoes like others suggested and I think that made a big difference. I used low sodium bacon because my husband has to watch his salt but I ended up adding it to my bowl, this soup needs salt! Pretty easy, good for a weeknight.

Mexican Rice

This was so delicious! I didn't have saffron but didn't miss it either. Otherwise I followed directions and I loved how this rice came out. Added to black bean tortillas.
