Caramelized Baked Chicken

Based on some reviews I changed this up a little and maybe that was the downfall of the recipe. I used chicken breast and cut it up into small peices. I marinated it for a couple hours and then simmered on the stove top. They were not good at all. not much flavor even with the marinating.

Whipped Sweet Potato Casserole

So easy and so good. I made exactly as recipes called for except I used the big marshmellows, this was fine except that my husband was a little too excited and added too many! I would make this again for the holidays.

Caramel Apple Pork Chops

I read a bunch of reviews and altered the recipe as follows: First I pounded the pork before it was cooked. then I threw the pork chops into a pan w/ vegtable oil and seared them although they were so thin that they were pretty much completely cooked. Put the pork chops into a casserole dish and get started on the apples. I used 2 apples but made enough sauce for 10 servings. Then I threw the apples/sauce on top of the pork and put into the oven for about 20 minutes. The pork was so tender, this is such a great dish with impressive presentation and not too much work, just a lot of dishes! I might not make as much sauce next time, it's very sweet so a little goes a long way.

Sauteed Apples

These were very yummy and very easy. I made as a side with homemade chicken nuggets and every gobbled it up. The next morning, I made pancakes and put the leftover apples on top and they were great! Didn't need syrup. The only thing, I think next time I won't add the full amount of sugar. Great fall recipe.

Sweet and Sour Sauce II

This was great! I halved the recipe since I didn't want too much. I let this simmer for a while because the consistency didn't look right. In the end I was sceptical but it was the perfect consistency. I will absolutely make this again.

Easy Lasagna II

We had friends over tonight, one of whom is known for her Italian cooking. Well, she was practically licking her plate. I made a few changes: I do not like meat in my lasagna so I skipped that step. I did bring the sauce to a simmer and added a couple of cloves of garlic. Also, I used 1/2 non-fat ricotta and 1/2 low-fat cottage cheese along with low-fat mozzerella. I used 4 cups mozzerella though! I used about 1/4 cup of water rather that 1/2 cup. To make it even easier, I put it all together earlier in the day while the kids where napping and then baked it covered for an hour and 20 minutes uncovered. This was so great and not hard at all!! I would highly suggest to anyone looking to feed a crowd but not wanting to cook for hours.

Herbed Chicken Nuggets

Wow! These are great and not bad for you at all compared to normal chicken nuggets. I think it took longer to cut the chicken up than anything else. I used a Italian herbs mix rather than the herbs listed. Also, I did not add oil to the dry mix, I drizzled the nuggets once they were on the cookie sheet. I think that I might try breading and freezing them then pulling them out to cook at my convinience. UPDATE: I now make a double batch and freeze half. Once defrosted, I make them exactly the same and they turn out great. My husband is usually a snob about frozen meat and he was surprised to hear (after he finished eating) that they had been frozen.

Honey Mustard Sauce

This was very good for a homemade honey mustard sauce. I used about 1 cup of mayo (low-fat) and then upped the mustard a little in an effort to lower the fat. I think that next time I won't use so much mustard as I am not really a mustard lover. Alos, used yellow mustard rather than dijon.

Big Soft Ginger Cookies

These were good but a little too sweet. I might try again with the OJ. Also, I didn't have allspice so if I make again I will add that. I did have to refridgerate the dough for about an hour because it was impossible to work with otherwise.

Savory Party Bread

This was very good, I brought to a girls night and it was gone within 15 minutes. I made some changes however, I bought a loaf of bread with roasted garlic cloves in it. I ended up pulling out the cloves however because I used garlic in the butter rather than the onion. Also I did not use the poppy seeds. It still came out great.

Candied Chicken Breasts

I breaded the chicken and browned them earlier in the day as well as putting together all the ingredients for the sauce. Then, when it was time to start cooking dinner, I pulled the chicken out of the fridge, boiled the sauce and dumped it over the chicken and threw it in the oven. What a great make-ahead recipe this turned out to be!! It was so good, nothing too overpowering and no leftovers! This will absolutely be put into the rotation.

Simple Oven Fries

These were great! I put them in at 350 because I was cooking chicken at that temp., it didn't really make a difference except that they took a little longer. One note, try not to get the extra oil onto the cookie sheet, I dumped the fries onto the cookie sheet when they were all coated and the fries that were sitting in more oil weren't as good as the others.

Baked Teriyaki Chicken

My husband loved this! I only had a little less than 1/4 cup soy sauce left so that's all I used but I think that I would do it the same way next time. Also, I used red wine vinegar since that's what I had. I did not cook the marinade on the stovetop the first time I made this, I didn't realize I was supposed to, when I made it again I did bring it to a boil but we didn't like it as much like this. Next time I will mix the marinade and just pour over chicken right before I put in the oven. Usually teriyaki chicken has too strong of a soy sauce taste for me. I made the sauce ahead of time and threw it in the fridge. This was a nice easy meal to make with 2 small children demanding most of my attention.

Broccoli Casserole III

This was good, I used a shredded cheddar and colby jack mix. I didn't use as much cheese or butter as called for but it was still very good. Actually I used Olivio spread and it worked great. My only complaint was the broccoli was a little dried out on top. I used fresh broccoli which I steamed in the microwave for 2 minutes before I put everything together. Next time I will probably steam it longer to get it nice and soft.

Cucumber Sunomono

This was great! We had some fresh from the garden cukes that we needed to use and this was the perfect lite summer salad that we were looking for. I made exactly as directed. Next time I will add carrot as suggested. I served with baked teriyaki chicken from this site and they complimented each other very nicely.

Grilled Peaches and Cream

These were very yummy. I did make a few changes, I couldn't find the cream cheese with honey and nuts so I used regular cream cheese and mixed in cinnamon and sugar. I think that next time I will add a little salt to the cream cheese. Very easy but impressive.

Lime Chicken Soft Tacos

These were awesome and so easy!! While the babes napped, I made the marinade and cut the chicken. When it was time for dinner I pulled it all out, dropped it in the pan and dinner was cooking! Just one pan for everything. I heated the tortillas in the microwave and served the chicken with chopped tomato, smashed avacado and refried beans. Made again with sour cream and salsa and it was just as delicious. Also, I left out the scallions. YUM, I will definetely make this one again.
