Grandmother's Buttermilk Cornbread

Reviewed: Sep. 8, 2008
I will try this again and hopefully change my rating but this was not great. I cooked it for 30 minutes and it was dry.

Ten Clove Garlic Marinade

Reviewed: Sep. 8, 2008
Great! My husband was so impressed. I didn't have steak sauce so I used BBQ sauce. I made the marinade 9AM and grilled at 6:30, there was plenty of flavor. I just had some leftover steak tips shredded in a roll with melted swiss, delicious! So much flavor. UPDATE: I buy the family packs of steak tips, divide & marinate them in a freezer ziploc. I pull them out a day before I want to eat them & let them defrost in the fridge. They are perfectly marinated & taste nice & fresh. Super easy for those crazy days.

Absolutely Fabulous Greek/House Dressing

Reviewed: Sep. 8, 2008
I made this in my blender and slowly added the oil at the end. Amazing!! I've made it before and just added the oil and mixed, it wasn't the same! The trick is to make it in the blender and add the oil slowly at the end. Before you serve let some feta sit in the dressing too, just delicious.

Mimi's Slumgullion

Reviewed: Sep. 4, 2008
What a name! This was very good. Took longer than I thought, the reviews are varied about that, I guess it just depends on how thick you cut the potatoes. I added garlic and some of a dry packet of italian dressing. Based on reviews I waited to add the peppers but I cut them so small I don't think it mattered. Next time I will probably cut them a little thicker. To make it lower in fat I used only a little olive oil, about 1 1/2 TBS and turkey kielbasa. Was very good, I will absolutely make again.

Didn't really like this, neither my husband or I cared for the spice mixture. Sorry!

Grandma's Moist Cake

Reviewed: Aug. 30, 2008
This cake was good and very easy. I had all the ingredients on hand. I didn't change anything. Made 3 cakes which cooked for about 20 minutes. Served with a carmel frosting.

Caramel Frosting IV

I used less sugar (brown and powdered) based on previous reviews. This was good but still very sweet.

Quick and Easy Chicken Noodle Soup

Reviewed: Aug. 29, 2008
This was great. We had a roasted chicken last night so I pulled off the meat from that, about 3 cups. I added the carrot to the onion and celery, next time I will add some garlic too. Instead of dried herbs, I used fresh. Additionally, I added corn, fresh from the cob and I think that made a big difference, it was a nice crunch, not the same as canned corn. I did not add the noodles, I made them separately so that I can freeze the leftover soup. Added some croutons (when serving) and it was very good and really very easy. Will absolutely make again this winter. My husband just told me that was the BEST chicken soup he has ever had. He was not excited at all about soup for lunch, in fact he wanted me to use the leftover chicken for a pot pie but was in love with the soup after the first bite. The fresh corn really added so much and the crunchy croutons on top were great too.

Brownie Mallow Bars

Reviewed: Aug. 9, 2008
Wow! These were awesome. I only had large marshmallows so I quartered them. Also, I put the brownies in the fridge for a little bit before I made the topping and it was so easy to spread. To serve I but them into small squares since they are very rich. Everyone LOVED them!

Mom's Zucchini Bread

Reviewed: Jul. 17, 2008
Wow! I can't stop eating this bread. I used 1/2 cup oil and 1/2 cup applesauce and 1 1/2 cups white flour and 1 1/2 whole wheat flour. Also, I omitted the nuts. It cooked for 55 minutes. Everyone in the house loved this & it's not hard to make at all. YUM

Crustless Spinach Quiche

Reviewed: Jul. 17, 2008
When I said that we were having quiche for dinner my husband was less than excited. However, he helped himself to two servings and said it was the best! I only used 2 cups of cheese (monterey jack) and next time I would use a little less spinach. I served with zucchini bread and chicken sausage. Will absolutely make again.

Creamed Spinach II

Reviewed: Jul. 9, 2008
Yuck! I used a low-fat cream of mushroom but still added the butter and used fresh garlic rather than garlic salt. I even added parmesan cheese. No one (5 adults) wanted to eat this! Sorry.

Bean Burrito Casserole

Reviewed: May 21, 2008
This is so easy and tasted great. My husband went back for thirds and cleared his plate every time, my 2 year old loved it as well. As usual I prepped this ahead of time, I made the soup/sour cream/chile mixture earlier in the day then spread it over the frozen burritos. Not that it isn't easy enough! The only thing is I cooked it for 30 minutes and it was not that hot, maybe I was supposed to defrost the burritos first?

Cheryl's Spinach Cheesy Pasta Casserole

Reviewed: May 20, 2008
This was great, my husband said it tasted restaurant quality. I added some red pepper flakes, garlic powder and onion powder. I also only used 1 tablespoon of oil and added 1% to make up 1/4 of a cup. I made early in the day (while the kids were sleeping) and then just threw it in the oven. This would be great to make for someone who just had a baby or moved.

Light, Crisp Waffles

Reviewed: Feb. 26, 2008
These were great. I didn't have buttermilk so I used 1 cup milk - 1 tbsp then added 1 tbsp vinegar. Followed everything else exactly. My only complaint is that I used a lot of dishes to make these. I think I will take another posters advice and make extra of the dry mix next time and freeze it.

Monkey Bread V

Reviewed: Jan. 6, 2008
Wow!! I have made twice now and everyone that's had it, loves it. I used frozen white bread dough. The second time, I let it defrost, cut it (I skipped dipping my scissors in water and had no issues), rolled it in sugar and put in the fridge until the morning. I just used a 9x13 pan and a 7x9 pan, there was a lot! When I pulled it out in the morning it was huge!! I followed the rest of the directions exactly and they came out great. What an impressive thing to make for a brunch which is still super easy. I love recipes that I can do most of the work in advance!
