Delicious Raspberry Oatmeal Cookie Bars

These were great. Very easy to make, I used my hands to mix it all up. I added chocolate chips to the top thinking I could spread them for a top chocolate layer but that didn't work well, next time I will add some chunks to the jam layer I think.

Slow Cooker Chicken and Dumplings

Original Homemade Italian Beef

This is a sandwich that I crave! I LOVE it. I make it with 1 packet seasoning, fresh garlic, no water and I add the peppers right at the start. Shred and put back in crockpot for half and hour. YUM!! Put in roll, provolone over the top and stick in broiler until cheese bubbles...

Juicy Roasted Chicken

I'm not sure what the celery adds to this but the chicken was good. I would pull out a little sooner next time since the chicken will finish cooking (just 5-10 degrees) as you let it sit tented with foil. My only complaint was that there was so much butter on the bottom is was hard to make a true gravy. I will make again though, really very easy.

Apple Pie by Grandma Ople

This is a great pie. I didn't have quite enough time to cook it so that the apples were as soft as I would have liked but I will absolutely make again and leave more time. I poured the carmel sauce over the apples and put the crust over that.

Apple Brownies

These were so moist and delicious. I omitted the walnuts and diced the apples. Rather than butter I used Olivio, a little less than 1/2 a cup. Next time I will probably cut back on the sugar a little, these are very sweet. While I was chopping the apples, 3 seemed like way too much but I added it all anyway and I am glad I did.

Baked Sweet Potatoes

The kids didn't really like and husband and I thought they were OK. I didn't really like the consistency, they were pretty soft, like I should have mashed them or something. Don't think I'll make again but worth trying.

Potato Latkes I

These were OK. I used frozen shredded potatoes, I don't think I would use them again. It was a time saver but in the end I think it compromised the taste.

Buttery Cooked Carrots

Green Beans with Bread Crumbs

Don't hate me but I am reviewing this even though I pretty much made up my own recipe from this. I took the green beans, steamed them then put them in ice water. After draining them, I tossed them with a mixture of bread crumbs, olive oil, seasoning salt and parmesan cheese. Then I put them in the oven at 375 for about 20. I thought they were great! Kids wouldn't eat them and hubby said they were OK but he doesn't love veggies so that's pretty good. Sorry for ripping this recipe apart but I did come up with something yummy so thanks for the idea.

Baked Ziti I

My husband loved this, the kids even ate it. I thought is was good just not quite knock my socks off good. Worth making though. I used one pot so that I wouldn't have too much clean up. Boiled my pasta, drained it & left it in the sink then cooked the ground beef in that pot. I combined the pasta with the sauce then layered the cheese. I don't think I added enough provolone, will add more next time.

Eggplant Parmesan II

LOVE IT! There is a local farm that makes great eggplant parm and my husband said this was even better than the farm! This is an easy recipe to make ahead of time, just wait until you want to eat to put it in the oven with the sauce and cheese. I sliced the eggplant pretty thinly and laid them out for a while with salt on paper towels for about 1 hour. Then I baked the breaded eggplant for 30 min. Even the kids like it. Will make a double recipe so I can freeze one next time.

Ten Clove Garlic Marinade

Great! My husband was so impressed. I didn't have steak sauce so I used BBQ sauce. I made the marinade 9AM and grilled at 6:30, there was plenty of flavor. I just had some leftover steak tips shredded in a roll with melted swiss, delicious! So much flavor. UPDATE: I buy the family packs of steak tips, divide & marinate them in a freezer ziploc. I pull them out a day before I want to eat them & let them defrost in the fridge. They are perfectly marinated & taste nice & fresh. Super easy for those crazy days.
