Pasta with Greens N Beans

We really liked this. I omitted the pasta & used spinach. Also, I used the full roll of sausage which was 12 oz. Next time I think I will add more broth, I liked it kind of soupy.

Chicken Enchiladas I

I liked these but my husband did not, he doesn't like Mexican unless it's from a restaurant. I omitted the tomato soup & water, I used salsa instead. Also, I didn't have a green pepper. I used wheat tortillas. Over the top I used enchilada sauce. I am freezing the ones that weren't eaten for another night. Must soften the onions next time, I don't like the crunch of the onions...

Fast and Friendly Meatballs

These were good, everyone ate them which is saying a lot! I added sage, onion powder, garlic powder & used Italian breadcrumbs. I will make them again for sure, I would like to try freezing them to make for an even easier week night dinner.

Eggplant Snack Sticks

Acorn Squash

We all really liked this & I will be making again but I am a little confused about serving it. I put in the butter & sugar and put the top on then cooked it for another 1/2 hour. Once it was done I wasn't sure how to serve it so I scooped it out of the skin and mashed it up. It was NOT easy to get out of the skin but worth the work.

Amazing Pork Tenderloin in the Slow Cooker

I made as written but also added garlic to the roast. Next time I will add more garlic. It cooked for about 4 1/2 hours on low (but I have a HOT crockpot) and then I turned it off for an hour or so because we weren't ready to eat. I served it fried sage beans and acorn squash (both from this site). The flavors worked wonders together. My husband said he could eat this every week.

Sage Fried White Beans

I made these with half the oil , navy beans & kept everything else the same. Easy & delicious. Even the kids ate them. Served them with pork & acorn squash.

Grilled Brown Sugar Pork Chops

I combined the sauce ingredients earlier in the day so it would be a little less prep. Once I made the sauce I added a little to the pork chops & let them site for a few minutes before I grilled them. They were great!! Very easy & flavorful. I only used 3T oil & next time I will cut it down to 2T.

Quinoa and Black Beans

This isn't bad! I didn't have any cumin & don't care for cilantro so didn't include either, also, I used chicken broth. Very easy & good. Even my carnivorous husband liked it. UPDATE: I froze some & it was great defrosted.

Fluffy Pancakes

I made these for mothers day breakfast & my in-laws, who are pancake connoisseurs, said they were the best they tasted. I x4 the recipe & made them with various add ins. I added the wet to the dry instead of vise versa so that I only used 1 big bowl & 2 measuring cups.

Roasted New Red Potatoes

These are good. I used new potatoes, but not red. I cut them a little too small, they were pretty crispy but still good! Next time I'll add more salt.

A good non-traditional pasta salad. It was a pain to chop the salami and pepperoni only because they are hard to cut but overall an easy recipe.

It's not that it wasn't good necessarily, I just didn't like it. I guess fresh garlic is not my thing, I love it cooked but not fresh like in this. Thanks anyway! I gave the rest to my mother who loved it.
