Filet Mignon with Rich Balsamic Glaze

I just made the glaze. Mine never did become syrupy but it was good with our steaks. I will try again.

Tortellini Soup

The soup was really good but I just used this as a base. I only had 4 cups broth so it was more stew like. I started by sauteing onions & garlic, then adding chopped carrots, broccoli & a can of white beans. I added the broth and brought it to a boil then added the tortellini, let that cook for about 5 minutes, then added some seasoned salt and the tomatoes. I served it with a wheat baguette toasted with a smidge of butter and parmesan that I broiled. Not bad and good veggies!

Golden State Mushroom Soup

I used 1% milk, didn't have bouillon ganules, added a tbsp or so of sherry & didn't use sour cream. Once the soup was cooked I puled the mushrooms in the food processor then brought it to a boil again. I served with croutons & melted swiss, yum!

Kumquat Marmalade

I let the fruit soak for about 18 hours. Then I let it boil for a WHILE! It never did gel but it tastes great. Certainly a great way to use the kumquats no one wanted to eat.

Fresh Pineapple Upside Down Cake

My husband said it's the best cake I ever made!! I made exactly as directed. I bought a fresh pineapple (the already cored fresh pineapple) assuming there would be enough pineapple juice but there was only about 1/4 cup. I used canned pineapple juice to make up the difference. Baked about 28 minutes.

Ooey Gooey Breakfast Rolls

These were awesome. I'm not sure what the pudding mix adds but they were great! I prepped them the night before, pulled them out to come to room temp and then cooked them off in the morning. Very good and really pretty easy.

Dad's Steak Rub

This was great! I let it sit for about 20/30 minutes to marinate. I used montreal steak seasoning and added salt. Very good, I will be using this again!

Easy Broccoli Quiche

I made it as called for except that I didn't add garlic, turns out I didn't have any! It was still delicious. There was too much egg for my pie crust, probably could have made 2 quiches!

Amish Breakfast Casserole

I made this for Christmas brunch & everyone loved it! I prepped the eggs & cheese & the bacon & onions the night before. I put them in seperate containers, also put the shredded potatoes (Ore Ida) in the fridge to defrost, mixed them all in the AM & threw it in the oven. Super easy because you can prep the night before. Will be making this again.

Cinnamon-Raisin Granola

This is great & less expensive that store bought granola. Plus, I can control what is being added. I used maple syrup rather than brown sugar so that I wouldn't have to put it on the stove. We like our granola crunchy so I cook it until it starts turning brown then let it sit on the cookie sheet for a while after I take it out of the oven. This is great in yogurt, with mild or plain. YUM!!

These are great & very easy. I baked the crust for 6 minutes before I added the meat/cheese. Also, I dried the red pepper on paper towels before adding. Mine was not soggy at all.

Pasta with Greens N Beans

We really liked this. I omitted the pasta & used spinach. Also, I used the full roll of sausage which was 12 oz. Next time I think I will add more broth, I liked it kind of soupy.

Chicken Enchiladas I

I liked these but my husband did not, he doesn't like Mexican unless it's from a restaurant. I omitted the tomato soup & water, I used salsa instead. Also, I didn't have a green pepper. I used wheat tortillas. Over the top I used enchilada sauce. I am freezing the ones that weren't eaten for another night. Must soften the onions next time, I don't like the crunch of the onions...
