Pumpkin Apple Streusel Muffins

I used 1 1/2 cups of whole wheat flour and apple sauce in place of the oil as suggested. These came out very good, nice and moist, do not seem low fat. I did not make the topping. I am not sure if I didn't use enough batter for each muffin but I only had to cook mine for about 25 minutes.

Mandarin Chicken Roll-Ups

This was great!! I made it on half of a pita rolled up, it was a little messy but worth it. I didn't have the pepper or the onion but I don't think I was missing anything. Nice figure friendly lunch idea.

Simple Whole Roasted Chicken

This was so moist and delicious. This is going to be how I make roasted chicken from now on. I love that you don't need to use any oil. Everyone ate this up!

Hot Peanut Sauce

This was awesome! I served with roasted chicken and it was a great addition. I ommited the cayenne pepper and only used 1 1/2 tbs soy sauce (it's all I had left).

AWESOME RECIPE!!! I made this for Rosh Hashanah dinner and it was the hit of the night. There was another kugel from a Jewish deli and everyone said mine blew that one away!! I would make more topping next time, everything else was perfect. I will be making this for every holiday!!

Sloppy Joes II

These are good, sweet but good. I made with groud turkey, I don't think it affected flavor much. Also used fresh garlic rather than garlic powder. I will make again.

RamJam Chicken

Very good. I put it all together last night and grilled the chicken today for lunch. Served it with avacado. Will make again, it was nice and easy to put the marinade together. Plus no clean up, just used a ziploc bag!

Apple Crisp III

Perfect!!! With a few tweaks though: 1/2 brown 1/2 white sugar, less water and less butter. Also, I broiled it for a minute or two at the end. Really such a great fall dessert!

Sesame Green Beans

I made this with broccoli and hy husband who doesn't love broccoli, loved it!!! So delicious. I made a few other tweaks, I added some garlic when I added the sesame seeds, then I added a splash of soy sauce and some red pepper flakes once the broccoli was simmering. I will absolutely make this again.

Mid-Summer Italian Bread Salad

I changed this a little. I cut my bread into slices, brushed it was a little butter, rubbed it with garlic and grilled it. I also added gorganzola cheese which really made a difference. This was so yummy, we were scraping the bowl!

Deep Dish Layered Salad

I just made the dressing, not the salad, and it was delicious! Tasted better tossed with the salad than on it's own. Salad was just field greens and avacado, dressing was the perfect compliment. I did make it a couple says ahead of time and I think that helped the flavors blend.

Addictive Sweet Potato Burritos

4 1/2 stars. This was very good, not too hard but could use some oomph. I cut the water down to one cup and cut back just a little on the spices, mustard and soy sauce. Next time I will use all the spices recipe calls for.
