Old-Fashioned Chocolate Fudge

Megan's Granola

I really enjoyed this recipe. I reduced the recipe to 5 serving (I'm the only one in my house who eats granola) and it was fine. The only thing is, you have to watch this or it will burn! I stirred mine after ten minutes and put it back in for an additional 10 minutes and it was almost burned. I also only put mine in a 315 degree oven. I think next time I will either bake for only 15 minutes or I will reduce the heat to 300 degrees. I will definitely be using this recipe again though.

Refried Beans Without the Refry

These are the best refried beans I have ever had! I had never considered making my own. They are really easy and delicious. Mine took longer to cook because I put my slow cooker on low while I was at work, the beans were still undercooked 8 hours later, so I put the cooker on high for about 3 more hours and they were perfect. I did have to add about 1/4 cup more water. I didn't chop my jalapeno, so they weren't hot at all (next time I will chop it though, I like a little heat). I followed another reviewers advice and substituted half black beans. I will making these from now on instead of buying canned beans :)

Candy Bar Pie

This was so simple! I may have used twice as much coolwhip as the recipe calls for, so I didn't have a problem with the cream cheese being overpowering. I also added about 1/4 cup of peanut butter. I used my own graham cracker crust recipe that has cinnamon and cashews. It was smooth, creamy and rich. I will be making this again!

Mexican Rice II

This was a very nice side dish for my chicken enchiladas and was also good in tacos. I used brown rice and eyeballed the seasonings. I may try it again with white rice, my brown rice always comes out a bit mushy. I also used chopped tomatoes with green chiles (no tomato sauce) that I pureed in the blender with one chipotle in adobo sauce. I will definately make this again.

Sarah's Rice Pilaf

This recipe was very simple and came together well. The measurements were perfect and it came out fluffy. I added bell pepper and garlic with the onion as well as salt and pepper. I also added chopped smoked almonds. I served it with roasted garlic gravy. I don't believe this would have had enough seasoning for me if I hadn't made the additions that I did. All in all a very good side dish!

These were great! I also used the Homemade Pancake Mix recipe from this website instead of boxed. And I added chopped pecans, walnuts and cinnamon. This was a pancake I didn't feel guilty about.

Beans, Greens and Garlic Soup

I will have to admit, I was skeptical as this cooked. This was my first attempt at beans and greens and I'm not a big fan of greens. This was awesome! I cooked it and put it in the fridge overnight, put it back on the stove the next night and thickened it up then served it over rice. I will definately make this again!

Peanut Butter Pie

This peanut butter pie is awesome. It's rich and has a strong peanut butter flavor. I make it for church dinners and family get-togethers. Everyone loves it and it is so easy to make. I top mine with a little chocolate sauce.
