Zucchini Boats on the Grill

Just made this today for my husband's birthday. He loves raspberries so it was a definite hit. Everyone at the celebration loved it. Used fresh raspberries from the farmers market. Will for sure make this again.

Grilled Eggplant, Tomato and Goat Cheese

I think the key to this recipe is using the right eggplant. We bought some from the farmers market; picked that day. A great meatless meal that leaves you satisfied. Will definitely make again.
