Lasagna Roll-Ups

This was delicious! I am vegetarian, so I used Quorn crumbles instead of beef, used ricotta instead of cottage cheese and added a bit of fresh rosemary to the cheese mixture. It was fast, much easier than I would have thought and delicious! Thanks for the great recipe...it's a keeper

Spinach and Leek White Bean Soup

I thoroughly enjoyed this soup. I used a vegetarian chicken broth and, like another review suggested, used some of the green section of the leeks. I froze some of the soup for later and it did very well. Easy and good!

Broccoli and Tortellini Salad

Man, this was good! I used vegetarian bacon and, per other reviews, cut down on the sugar by half. It was still pretty sweet and I might use less next time, but it was still amazingly tasty and pretty easy to make. I'm having guests for the holidays and plan to make this for them.

Easy Vegetable Pot Pie

I made this tonight and loved it! I am vegetarian and did add some Quorn brand chick'n tenders. Yum! I also cut out the thyme and pepper completely and used 1 1/2 tsp of poultry seasoning, a dash of powdered garlic and less than 1/16 tsp of cayenne pepper for a little kick. I did use the egg wash, which gave the crust a beautiful golden color. I forgot to bake the bottom crust first for 5 minutes per other reviewers, but luckily it turned out nicely anyway. It was wonderful to have a pot pie again as a vegetarian and have it be so good!

Layered Eggplant Hamburger Casserole

I loved this dish! I am vegetarian so used Quorn brand veggie crumbles, added some mozzarella, mushrooms and sliced red pepper. I disagree with those that said the onion didn't add anything to the recipe; I thought it was excellent. Of course, I sliced them quite thinly so maybe that made a difference. My roommate doesn't care much for eggplant and is not vegetarian and he still really liked this dish. Will definitely make again.

Cheddar Bay Biscuits

Loved these biscuits! I did as others suggested and increased the cheddar shreds to 1 cup and added 1/4 tsp. Old Bay Seasoning to the butter mixture. I also put them back in the oven for a minute after brushing with the butter as per one of the suggestions that I read and they were perfect. My first time baking biscuits from scratch, but so easy that it won't be the last!

Brown Rice and Black Bean Casserole

I made this recipe tonight for dinner and loved it. I thought it was very tasty. I don't understand how anyone could think this was less than average. I took the suggestion of a reviewer and put it in tortillas, used four cheese Mexican blend instead of swiss and, since I am vegetarian, used quorn tenders to substitute for the chicken. I think this recipe lends itself nicely to any changes you want to make. I might add sliced black olives next time or some jalepeno. Thanks for the great and pretty easy recipe!

Italian-Style Swiss Chard

I made this tonight for dinner and was it ever good! The only thing I changed was to lessen the salt in the cooking water and also to add more water as I had so much chard. The flavor was amazing. I've never had chard before and now I know what I've been missing. It's delicious and I would recommend this recipe to anyone and everyone!

Baked Polenta with Fresh Tomatoes and Parmesan

I made the recipe exactly as is and loved it! I have tried the premade polenta in the tube before and did not like it, but thought I would give this a try and both myself and my roommate really liked it. Fresh basil from the herb garden made it extra good.

Vegetarian Lime Orzo

I made this for dinner tonight and liked it very much. I did listen to other reviewers and added 3 cups of broth. It needed it! I also used fresh basil instead of dried because I have it growing in the yard and added 1/4tsp of crushed red pepper. Other than that, I followed the recipe exactly and enjoyed it very much. Will make again.
