Kim's Ultimate Meatloaf

Reviewed: Mar. 7, 2005
Needs less liquid, and more to be siphoned off after cooking, but delicious! I used turkey.

Very good, better when extra flavorings added (more spices, etc), topping burns easily.

Very good, a great way to use up dark meat for those of us that really only eat the white.

Cucumber and Mint Salad

Hubby thought it was a little "strong" (vinegary) but I loved it. Up the sweetness though, more honey.

Cornish Game Hens with Garlic and Rosemary

Reviewed: Apr. 1, 2005
This was great even though I boo-booed and put the birds on the rack upside down (they should be breast side up). Before cooking, I mixed up a paste of butter, garlic and rosemary and inserted it under the skin, this really gets the flavor in. I also used dried rosemary b/c I couldn't find any fresh, which was OK but I'll wait for fresh next time. My husband loved it. one other thing though, some reviewers added all the sauce at the beginning, so I did, but it evaporated and burnt way too quickly, i had to keep deglazing it with wine, which was annoying, but it still tasted great.

was OK, I added garlic. i still thought it a little bland, but hubby loved it. Should've cut the potatos smaller I think, for more flavor. Chicken was ternder and delicious, though.

Baked Dijon Salmon

Reviewed: Apr. 13, 2005
My husband says "four star resaurant!" It's great. Next time, will take suggestion to de-glaze pan with white wine for more sauce, it looked like it would've been great but I had no wine on hand (a mortal sin in some kitchens, I know...)

Very good, husband loved it. A little too salty, I'll probably cut down on the boullion next time (i use a paste, not cubes)

Pasta with Yogurt Sauce

Reviewed: Apr. 27, 2005
I hated this. I thought it would be a good use for the yogurt left over from when I made curry. It was sour tasting, I added as many "sweet" herbs as I could think of and a little honey to the sauce. I won't make this again.

Fish Chowder II

Reviewed: May 17, 2005
It was OK. The milk and water didn't really blend well, making it look a little unappetizing, and the cook times didn't seem long enough as my very small potato cubes still weren't very soft, and it was bland. Definately would need to add to it to make it good.

Baked Basil Fries

Reviewed: Dec. 20, 2005
I use the skeleton of this recipe to make fries of all kinds - depending on what flavor mood I'm in. One of my favorites just uses oo and lawry's season salt when I'm in a salt-feind mood. I find they come out much less greasy and unhealthy than when I pan-fry them.

Slow Cooker Dump and Go Cheesy Chicken

Reviewed: Feb. 11, 2010
This would have been a 3 star if it weren't so darn EASY! I put the breasts in frozen, sprinkled some garlic powder and celery salt on them, dumped in the two cans of cheesy soup and a splash of milk (didn't read about mixing that witht the soup....) and that was it. Served over rice. Hubby LOVED it, I thought it was pretty good.
