Sopapilla Cheesecake Dessert

The general recipe was ok and the only reason I rated it this low is because there is WAAAY too much sugar. I thought that 1 1/2 cups was too much,however, decided to follow the recipe as is. I also cut the 1/2 cup coating to merely 1/8, still horribly sweet (and i love sweet cakes). The recipe would be better with half the sugar indicated.

Cinnamon Sugar Biscotti

I'm giving this four stars only because I will make these again and the final taste was very good, however, I didn't enjoy the process too much. They were not that easy to make. The dough was really soft and difficult to handle. I lost much of it in the process and ws left with lots of crumbs....I'll try one more time...perhaps I missed something

Banana Banana Bread

Very good. Made it the first time just as is. The second time, I doubled the recipe, reduced the flour by 1/3 and replaced it with a combination of ground flaxseeds, wheat germ and oats and made them into muffins. Husband and son loved them. Very moist recipe. Definatly a good starting base that allows for modifications to your liking.

Honey Baked Chicken I

Very good recipe. Strong Honey taste, yet if that is what you are looking for, this is the recipe. I'm going to try it next time with a little something, something like a dash of teriyaki sauce or some chili. But very good just as is.

Homesteader Cornbread

I took the advice of someone else and reversed the cornmeal/flour measurements. It was ok. Reminded me very much of a Banana loaf consistency (dense) which I was half expecting. I can definatly see this going well with somehting spicey like chili. I would make this again perhaps with some modifications.

Mandarin Pork Roast

Made it for some friends and it was well received. I made some changes. I used fresh rosemary and made a paste with garlic and olive oil. I then rubbed it all over the roast and let it sit overnight. For the sauce I mistakenly bought apricot with passion fruit jam instead of the orange! So I omitted the mandarins and the ginger. This marinade and method of preparation would be amazing on baby back ribs....which I plan on trying next! Or with some Pineapples!

Baked Fennel with Gorgonzola

I personally loved the combination of the gorgonzola and fennel. My husband found it to be a winner too. I prepared it for some friends and well some loved it, others didn't like the combination of the cheese with fennel, but I think it's because they aren't fennel fans to begin with....

Lemon Zucchini Bread

As my son is allergic to nuts, I replaced them with 3/4 cup frozen cranberries. I also used brown instead of white sugar. GREAT recipe. I will try this again in a double batch as muffins.

Beet Bundt Cake

Generally "ok". A very healthy type cake. My husband liked it as he isn't into creamy or overly sweet cakes. I think I may have overbeat the ingredients as it did say to mix well. Although moist, it was a little dense. I will attempt it once more yet with double the chocolate or maybe a little more sugar. The beet taste is there, very faint, but not unpleasant at all.
