Basil Shrimp
I thought this was spectacular!!! I used two pounds of shrimp and it was too late and cold to grill it, so I just heated up my cast iron skillet. When it was smoking hot I threw the shrimp and marinade in together....then served it with angel hair pasta and asparagus. It was soooo yummy, all the kids ate it, even the picky oldest one!! I combination of flavors was outstanding. Careful with the salt...next time I'll even use a little more white pepper. Definitely a keeper!!!

Butternut Squash Risotto
I just finished burning the roof of my mouth with this FABULOUS creation!!! I roasted my squash in the oven like others did. Otherwise I followed recipe exactly. I did stop adding stock when I had used about 3 1/2 cups. I added salt and pepper before the cheese and thought it was still a tiny bit bland, but after adding freshly grated parm...it is OUTSTANDING!!! I love this recipe and will make it again. *note* those that are using broth should expect their finished product to be salty, stock is not nearly as salty as broth and is much more flavorful.

Lemon Meringue Pie III
I've made this pie three times in the last week after reading ALL the reviews. The only thing I didn't do was mix the meringue with the actual lemon filling. The only thing the original poster leaves out is that you MUST MUST MUST get a really good seal between the lemon and meringue layers. Get that meringue all the way over the crust. It is a really tasty pretty pie!! Thanks for a great recipe.
