Irish Lamb Stew

This is what you call comfort food, Yummy! Made a few modifications, but nothing significant. My only complaint is that the lamb did not taste as good as I expected it to. For the price, I may sub beef next time, which may make some people gasp! I'd rather have my lamb roasted or grilled.

Easy Crab and Horseradish Dip

So simple, so delicious! The horseradish adds a nice kick, and I only used half. I like it chilled instead of warmed. Either way, it's a hit. I also used 4 oz of cream cheese with chives and 4 oz of reg cream cheese because it was what was in the fridge.

Sour Cream Chicken and Potatoes

The flavor of this was not worth the preparation, and I had trouble blending the spinach and other ingredients in my blender, which usually does an adequate job.

Chinese Chicken Salad III

I made this with Crab Rangoon I and had a wonderful dinner. The wontons only took 8 minutes to bake, I'm glad I checked or they would have burned in 20. Added a little extra vinegar to thin the dressing. May use less Hoisin sauce next time.

Crab Rangoon I

My husband took one bite and declared, "These are the best things I've ever tasted in my life!." Maybe a little over enthusiastic, but they were good. I only made 1/2 the filling and still had enough for at least 30 won ton wrappers. I also used a tad more cilantro.

Pan Fried Filets with Mushroom Sauce

Five stars for creativity and taste. I used thin-cut petite sirloin steak and it turned out great. The mushrooms really make the sauce and the jam and icecream add sweetness, but not too much. Definitely worth a try. I may have let the sauce simmer too long, but it was just enough for my husband and I, and I made the full amount. You may need more for 4 servings.

Butternut Squash Soup

My friend served a squash soup at her wedding as an appetizer, and I was hoping to relive the experience, but this wasn't quite the flavor I was hoping for. I did halve the cream cheese, which I think was a good suggestion, but still not "the best" in my opinion.

Asparagus Chicken

Good flavors! I lightly browned the chicken and then poached it in the wine and a little water and it turned out okay, but I will definitely grill it during the summer. With all the other flavors, the tarragon did not stand out as much as I was hoping for.

BBQ Chicken Pizza II

I agree that the BBQ sauce can make or break this pizza. I used a honey, roasted garlic sauce and thought it was too sweet. We did like it enough to try again though. I also added crumbled bacon and a combo of Mozzarella and MJ cheese.

Asiago Dip with Crostini

Fantastic! I did opt out of the lowfat version and used regular mayo and sour cream however, chopped the mushrooms(crimini) and chopped 4 sun dried tomatoes after I soaked them for 20 minutes.

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies were really great, but I would not describe mine as "fat" They were actually a little flat. I'll see if not melting the butter so much helps next time.

No-Peek Beef Stew

We liked it and the simplicity of this recipe is its greatest selling point. I really liked the flavor the red wine added to it. I also thickened it with cornstarch at the end because I thought it was a little too soupy. Next time I may try adding a few seasonings to liven it up a bit.

Fat Boy Nacho Cheese Dip

Neither my husband or I liked this recipe. The cheese dip was too thick and once it cooled on my plate it was a gelatin mass. I'm not a big processed cheese fan either, and the other flavors did not make up for this.

Beef and Bean Chimichangas

Pretty good. I went ahead and fried these instead of baking them. Top with a generous amount of heated Salsa con Queso and tomatoes and they are even better.
