Apple Banana Cupcakes

Delicious! I had to rate it right away. We ate some straight out of the oven. I followed the recipe for measurements but I had to change a few things because of what I had in the house. Used old frozen bananas that I'd let thaw over night in the fridge, and since I wanted to use all three, it was more than a cup of bananas. I left the "juice" in from those, too. I shredded the apples with a box grater (easier than I thought it'd be.) I used granny smith apples. I used butter-flavored shortening since that's all we had. Didn't have vanilla (what?!?!) so I used almond extract and a tiny bit of cinnamon extract since the almond was gone too. We also had no buttermilk, so I used a tablespoon of vinegar and filled to 1 cup of milk in a measuring cup, then let that sit 5 minutes and used 1/4 of it. Seemed weird, but our "cupcakes" turned out awesome! They were perfect after 22 minutes. Perfectly moist, as well. The ones in my baking stone muffin pan were perfect, the ones in the tin didn't rise as much. I had two 3 year olds help with this, and they loved it and loved the end result, too! Going to hit the store and make some caramel-like frosting for them to finish them tomorrow evening :) I really hope these are as amazing cooled and day-old as they were tonight (I think they will be!)

Fresh Homemade Salsa

I made one batch of this today for two 2 year olds and two 9 year olds. They all LOVED it (including me!) The older two said they would like it a little spicier. I loved it just the way it was. I did, however, add lime juice (and reduced the vinegar.) I used fresh tomatoes (didn't peel them.) I used cilantro from my garden, but it was actually the stalks and skinny leaves from the flowers, still tastes like cilantro, so why not? I don't have the leafy kind anymore, my plants have bolted and gone to seed. The cumin was a LITTLE overwhelming, but still delicious. I think after melding for awhile, this is going to be my favorite salsa! (I made it too runny, so next time I'll keep it chunkier and I definitely won't be going back to buying jars of salsa!)

Speedy Homemade Salsa

Mom's Zucchini Bread

I followed advice of some reviewers, and when I shared this bread with friends, they couldn't believe I made it myself. They thought for sure it was from a bakery or something like that. Wonderful :) Now I just need to buy more loaf pans so I can make more than 2 loaves at a time.

Glo's Sausage Fried Rice

I made this WITHOUT the sausage because we were using it as a side dish for pork-chops. It was delicious, just the flavor I wanted. It really does make a LOT, but I went ahead with the full recipe because I knew it'd be a good left-over for packing in lunches. I actually had to make it in two batches because we didn't have a wok or a skillet big enough for the whole mess! Great fried rice! Reminds me of the Japanese steak house!

Venison Bacon Burgers

Delicious! The best deer-burgers my husband and I have ever had. The burgers took awhile to make, but the bacon, bacon grease, and olive oil were such great alternatives to the fat we usually put in our venison burgers. MMMMM.

Chewy Sugar Cookies

Delicious... I made them just as the recipe said. I'm still a beginner so I didn't change anything. They were still chewy even a few days later. I baked them for my 2nd grade class and they LOVED them. Kid and husband pleasers :)

Miso Soup

I just made this miso soup and I think it tastes JUST LIKE the restaurants. I added some dried seaweed to mine, and I actually added a little too much, but otherwise, it's great!
