Tender Breaded Turkey Cutlets

This was a great way to use left over turkey. I had very little sour cream, so I also added equal parts of mayo and dijon mustard - it was delicious.

Shredded Potato Quiche

I served this quiche last night when a few friends showed up for dinner unannounced. I had baked the quiche the night before since I was planning on getting home late from work and not having time to cook dinner. After about 2 minutes in the microwave it was ready to serve and got rave reviews from both my husband and our friends, who wanted the recipe. Instead of using ham I substituted bacon and added chopped red pepper, green pepper, onion, and mushrooms. I did not have any packaged frozen hash browns, so I shredded two potatoes in my food processor. Like most of the reviewers I had trouble getting the potatoes to brown. I think next time I will cook the hash browns in a skillet with a little bit of oil as I would any hash browns, and then transfer to the pan to top with ingredients and bake so that they have the crunch that I love in hash browns. This is a very versatile recipe I look forward to experimenting with it.

Cheesy Carrots

These were really great. They are very similar to mashed sweet potatoes. I was really surprised how much flavor carrots have. I did add some milk to the recipe because it seemed a little dry to me. I will make this recipe again, however, I think the next time I will leave the bread crumbs off. I used finely ground crumbs and they did not brown, although the carrots did and it did not add any flavor, just made the dish messier.

Apricot Glazed Pork Over Fettuccine

Very good! I added more lemon juice than it called for, but other than that followed the recipe exactly. We had had pasta the night before, so instead of the fettucini, I made mashed potatoes and served the pork and apricot sauce over the potatoes - a very good combination. My husband asked me to keep this one.

Triple Dipped Fried Chicken

We recently made this recipe prior to a hurricane so that we would have something to eat after we lost power. Several hours later, even after sitting on the counter, it was by far the most cripsy chicken I have ever eaten! KFC's secret recipe has nothing on this one. The spices were a little more salty than I like, but it was still a great tasting treat. Next time I will use plain garlic instead of garlic salt, and maybe try some crushed red pepper or chili powder to bump up the spice. This will definitley become a hurricane necessity along with bottle water and flashlights! Thanks for the post.

Chicken Thigh Fricassee with Mushrooms and Rosemary

This was a very easy, very tasty recipe. I did not have any rosemary, so I substituted Italian Seasoning, and it still had tons of flavor. I served the dish over rice and it was delicious.

Chicken Thighs Surprise

I did not care for this recipe at all. The dish remninded me of a spicier version of chicken pot pie, which I have never liked. However, my husband, who loves pot pie, thought the dish was very good, and ate both his plate and mine. And as the description says, it is a very easy dish to prepare, so I gave it 3 stars.

Sweet Potatoes

I am not on the South Beach Diet, and tend to fry everything rather than baking, because my husband and I love crunchy food, so I was hesitant about trying this recipe. However, when they came out of the oven, smelling great, I was quite impressed! The potatoes came out great, and did not lack any of the crunch that I love in my fries. My husband thought they were out of this world and could not tell that they had not been fried. This makes me want to consider baking more often.

Easy and Elegant Pork Tenderloin

Wow, this was great! I did make a few changes to the recipe. I rubbed the meat with sage, thyme, and black pepper and let rest for 30 minutes. I did not have enough seasoned bread crumbs, so I crushed cheddar cheese crackers to combine with the crumbs and oil. While the meat cooked I heated red currant jelly and spicy brown mustard in a small sauce pan on the stove. After slicing the meat (my bread crumbs did not appear to be burned) I poured the sauce over the meat - it was delicious! My husband and I ate half the tenderloin by ourselves. This is a keeper, thanks for the post.

Parmesan Tomatoes

I originally served these with "kicken london broil with blue cheese butter", (also from this site), and they really complimented each other. My husband loved the tomatoes so much that he ate the leftovers for two days straight. We used the leftover london broil to make sandwiches and the tomatoes were great, because they already had the mustard, mayo, and cheese on them. He even topped his cheese omelets with them. A great way to use your garden tomatoes!

Kickin' London Broil with Bleu Cheese Butter

Although I liked this recipe a lot, there was nothing special about the meat rub (I will probably just use Montreal Steak seasoning next time). However, the blue cheese butter made the meal. I am not usually a huge fan of blue cheese because it is so strong, but the blue cheese and butter mixture was a perfect compliment to the meat. I will use this as topping for beef in the future.

Mashed Potatoes with Fried Mushroom, Bacon, and Onion

I loved this recipe. I do not like salt, so I never use it to cook, and so I have never had very good luck with mashed potatoes, but this was delicious! The ranch gave the potatoes the best flavor, and it was so easy. Thanks for the post, this is a keeper.

Honey Fried Chicken

I had seen this recipe on the site a few weeks ago, but did not make it then. Last night I was trying to decide how to prepare chicken, and remembered this recipe. I did not have the recipe with me, but recalled the basic idea. I smothered the chicken in honey and then dredged in seasoned bread crumbs rather then the flour, it was delicious! Chicken is not my family's favorite meat, but this recipe was a hit! It was very moist and sweet. I doubt that I will use egg to flour chicken again. I think next time I will try using the flour and add coconut to enhance the sweet flavor. Thanks for this recipe SmKat!

Squash Potatoes

Squash and Zucchini Casserole

This was delicious! I was concerned that there would not be much flavor because of the few ingredients, but it was just the right amount of flavoring. A great way to get rid of fresh summer vegetables!

Beef Potato House Pie Casserole

We thought that this was an easy and delicious casserole. I did make a few changes. I added mushrooms to the hamburger, along with steak sauce and worchestershire to add flavoring. To the potatoes I added garlic and italian seasoning. My husband and I both loved the recipe. This will definitely become a staple in our house.

Kabob Marinade

This recipe is very similar to one my mom has used for years, but with Worchestershire and much more oil added. The added ingredients made all the difference in the world. The meat was so tender and delicious! We are definitely going to keep this one.
