Easy Morning Glory Muffins

I'm really impressed at how delicious these muffins turn out with all the healthy modifications other reviewers have suggested. I substituted whole wheat flour for the all-purpose and applesauce for the oil (so no oil whatsoever in the muffins). They were so moist! I think next time I will add more nuts and try substituting brown sugar for the white.

Chocolate Bourbon Pecan Pie

This pie was not only beautiful, but it tasted so good! I think next time I will mix the chocolate into the butter mixture rather than lay the chips on the bottom of the pan, as other reviewers suggested. Once the pie cooled, the inside didn't look appetizing. But, everything else was perfect--and I thought the amount of bourbon was great (any less and there wouldn't be as much taste).

Manhattan Clam Chowder

I loved this recipe, but I modified it slightly because I thought it was too bland at first (I tasted it after it came to a boil). I cooked 4 slices of bacon (as per another reviewer suggestion), and then I sauteed the onion, green pepper, and a bit of garlic in the grease. I did everything else according to the recipe, only I added a bit of Worcestershire (maybe 2 tsp.), about 1/4 cup sherry, garlic powder, onion powder, and chili powder (all to taste). My husband and I couldn't get enough. I still gave the recipe a 5 because it really is so simple, and the base is still good but easily modified to taste.

Grandmother's Buttermilk Cornbread

This was my first time making cornbread from scratch, and is it ever addicting! I made the recipe exactly as it's written (except I substituted 1 c. skim milk + 1 Tbsp. cider vinegar for the buttermilk), and even with an oven that doesn't work well, it came out perfectly. I'll make this every time I make chili from now on, although next time I'll try it out with less butter (just to be healthier, not because it's greasy).

Pumpkin Turkey Chili

I'm giving this a 5 because with the other reviewers' suggestions it turned out to be the best chili I've ever made. I added a can of black beans, an extra can of diced tomatoes, a bunch of hot sauce, about 2 Tbsp. of Worcestershire, and extra chili powder. The pumpkin makes it into a really thick sauce without it being "stew-y". Great recipe! I also made this with Grandma's Buttermilk Cornbread from the site, and it turned into a fabulous meal.

Spicy Baked Sweet Potato Fries

These are great if you follow the recommendations of other reviewers. I used three sweet potatoes (there's only two of us, and we even had leftovers), cut them like fries, and tossed them with chili powder, garlic powder, fresh pepper, kosher salt, and 2 Tbsp. olive oil. I baked them for 40 minutes at 400 degrees (flipped them halfway), and they turned out so well and so healthy!

Cabbage Roll Casserole

My husband absolutely loved this, but only after we added spices (on its own we found it to be very bland). We added garlic powder, black pepper, and cayenne, and that definitely did the trick--he went back for thirds! I also used ground turkey to lighten it up a little, and I took it out of the oven after 1 hour because the cabbage was getting mushy.

Supreme Scalloped Potatoes

I followed a previous reviewer's suggestions and didn't boil the potatoes. I thinly sliced them horizontally and mixed them with the other ingredients. I also lightened the recipe by using fat-free chicken soup, sour cream, and milk, and I didn't add the butter. I did use regular cheddar, though. I baked them for an hour and 10 minutes, adding more cheese to the top in the last few minutes. They came out great.

Honey Lime Chicken Wings

Wow, these were absolutely perfect for a summer garden party. I decided to grill the wings (takes about 30-40 minutes on medium heat on a gas grill) and basted them with plain honey while they were grilling. I then tossed them with the sauce before serving, and people couldn't get enough of these. I actually think they may be some of the best wings I've ever made.

Triple Berry Crisp

I used 3 12 oz. bags of frozen mixed berries (strawberries, blueberries, blackberries, raspberries) but followed the rest of the recipe exactly. Everyone loved this and really raved about it, but next time I think I will make less crust and also use less butter (I think you can definitely cut 1/2 c. without any problems, maybe more).

White Peach Sangria

I loved this recipe, but I thought it might be too sweet so I didn't use the lemonade. I also used nectarines, green apples, and lemon slices instead of the fruit, and used mango vodka since I couldn't find peach. Everyone at girl's night just loved it. It is strong (which is good)--I quadrupled the recipe for 10 girls, and I still needed another two bottles of wine. People love this, so make more than you think. Since I hadn't tried the original, I still gave the recipe 5 stars, especially since my changes didn't affect the finished product negatively.

Gourmet White Pizza

I have to admit this pizza came out very tasty, although I wish there were more tomatoes and less chicken (I'm a recovering vegetarian, though, and my husband thought it was perfect). It is fattening, but a great way to spend calories.

Grilled Shrimp Scampi

I made these for a 12 person dinner party, and it turned out to be a great decision because most of the preparation can be done ahead of time (a big plus for me). I just stuck them on the grill right before serving. Great flavor.

Champagne Shrimp and Pasta

I made this recipe exactly as specified, and it will definitely be something I will use as a standby when I'm looking to impress. Not only were the flavors unbelievable, but the recipe itself is well-written and easy to follow. Great for a romantic dinner. ***Just a follow-up: I tried to double this recipe and it ended up taking a LOT longer to reduce the sauce. Add extra time if you plan to do this.

Awesome Slow Cooker Pot Roast

Although I usually make a wine pot roast, I couldn't turn down this recipe since it looked so easy to make. And, it turned out so well--the meat was tender and the sauce was very nice. Perfect meal when you don't have a lot of time for prep.

Fiery Fish Tacos with Crunchy Corn Salsa

I loved the idea of this recipe, which is why I gave it 4 stars, but I changed the "corn salsa" since others thought it was bland. I made my own: corn, green peppers, and onions sauteed in olive oil and then seasoned with chili powder, lime juice, and salt and pepper). They were great served with chopped fresh tomatoes and onions--definitely something I will make again and again.

To Die For Blueberry Muffins

The taste and texture of these muffins were absolutely great, and I even made them with frozen blueberries. I wasn't a fan of the crumble topping (I prefer the strudel topping from "Apple Strudel Muffins" from this site), and the muffins fell apart as I was taking them out of the pan. Since there are so few, this can be a problem if you're serving them to guests (as I was).

Spinach and Orzo Salad

I'm usually not a fan of traditional pasta salads, but this turned out to be a great side for a dinner I made for my boss. As per other suggestions, I added the spinach just before serving and used a balsamic vinaigrette (I made Good Seasons) for the dressing. It went really well with "Swordfish with Citrus Pesto" (Giada's recipe on Food Network), and a basic tomato salad (tomato, onion, basil, olive oil). I also substituted blue cheese to keep with the Italian theme, and I just loved the taste.

Kitchen Sink Cookies

These are great cookies and come out nicely every time. I used peanut butter chips rather than butterscotch, but I don't recommend substituting toffee pieces...they burned and melted and did something weird to the consistency.
