Vegetarian Korma
Absolutely delicious, and simple to make! A wonderful recipe! Can also be converted to vegan-friendly by substituting cashew cream for the heavy cream. Gives it a nice, nutty, sweet-spicy flavor.

Paneer Jalfrazie
Wonderful flavor, but I think I may have overcooked the cheese. Better if just seared on all sides and not quite browned so it can still melt a bit... oops! I accidentally added whole fennel seed, so I compensated by adding an extra 1/2 tsp. of ground coriander in addition. I think I may also add more tomatoes, or a small can of whole tomatoes, cut up, if I make again. Delicious!

Meatless Stuffed Peppers
These were really delicious and very flavorful! I used 2/3c. of cooked barley instead of the rice and added a touch of cumin (1/2 tsp.) along with the other spices in the mushroom / tofu mix. I also used 4 red peppers, cut lengthwise and seeded.
