Slow Cooker Mashed Potatoes

The dish itself was okay. Definitely nothing to write home about but it was all the work I had to do that makes me not want to give this more than 2 stars. When I saw the good rating, I had high hopes. I personally thought it was just like the box stuff. Didn't see any huge difference. And the fact that you have to cook the potatoes and mash them with other ingredients BEFORE putting in the slow cooker doesn't make any sense. Before I tried this recipe, I said to myself "Wait a minute, it looks like mashed potatoes are done in step #1.Then why put it in the slow cooker when it's already done? And then I thought MAYBE putting it in the slow cooker would actually make some difference in the flavor or something so I decided to give it a try. Nope, there's no difference at all in the flavor. I think I actually liked the flavor of "before slow cooker" better. It just doesn't make any sense that you make mashed potatoes and then put that done dish in slow cooker for more time. Why? It's just so redundant. Now I have one more big dish to wash and thinking of all the work and time I wasted to make mediocre mashed potatoes just upsets me so much.

Roasted Okra

I rarely see fresh okra where I live. So when I saw some fresh okra at a real good price on a trip, I bought some just to try this recipe cause I really like okra(at least the ones I tried). After coming back home though, I totally forgot about them and when I remembered, they were going bad already. Feeling kinda lazy, I was tempted to just throw them away but I forced myself to give this recipe a shot since it was really easy. I am SO glad I did. It was really easy and only took a couple of minutes to prepare. I cooked about 30 mins at 425 and they were just so good. Since I was cooking bbq chicken for dinner, I was just going to taste a couple but I couldn't stop once I started eating. I was worried about sliminess but it wasn't so bad. Or maybe I just don't mind that so much.I guess it never really bothered me before either which is kinda funny cause I'm usually really picky about stuff like that. Now I'm really wondering if I should plant okra this year. ^^ I should try with frozen ones and see if they come out as good.

Belgian Waffles

I didn't really know what to expect cause I didn't know what Belgian waffle was like. It was good but for all the work I had to do, I was a bit disappointed. I think it's that a bit soury smell/taste from yeast that didn't appeal to me too much. My hubby looooooved it though but it's a bit too much work so I'm not sure if I would ever make it again especially when I know that Fluffy pancake from this site is so good and easy to make for breakfast menu. Even my hubby said not to worry about making it again cause he was there during all the prep time. I may not be trying this again but for those who don't mind all the work, it would be worth trying. For some people especially those experts or those who love cooking, they may even think the prep work isn't so bad. I did make the batter the night before, too like some reviews suggested. I don't know if that made any difference in the flavor though.

Angel Chicken Pasta

I wouldn't say I loved it but I wouldn't say I hated it either. It was okay. Not sure if I would make it again though. It was still a bit salty even though I doubled the recipe with only one dressing packet.

Refried Beans Without the Refry

I like beans but I just don't like refried beans. When I go to Mexican restaurants, I always ask them to leave them out because I just don't like them at all. We've been cooking/eating Mexican food a lot lately using slow cooker and after seeing how many reviews this one had, I just wanted to try it for my husband cause he likes refried beans. To my surprise, I liked them very much, too. They were really good and I thought they completed my Mexican meals. I am looking forward to having them again with my slow cooked carnita(which is also from this site) for dinner tonight(we had them for lunch as well). I think just simple bean burrito with some rice and cheese would be good, too.

Lime Cilantro Rice

My hubby loooooved this rice. He said it's so much better than Chipotle rice. Well, I admit. I did change a bit but I think this recipe does give a very good basic?? idea. Well, my hubby doesn't like cilantro too much so I probably used about 2-3 TB spoon of it. For lime, I didn't put any zest it in cause I wasn't sure if I would like it. Oh, and I did use chicken broth just like other reviews suggested. My hubby loved it but I thought it was okay(still more than 3 stars though). I didn't like the butter smell too much. I'm a little too sensitive to smell so next time, I may try different type of oil. It was good in taco for sure. It didn't have whole a lot of flavor on its own but as a filling, it was definitely good. My hubby couldn't stop saying how much he liked this rice. Oh, and it's so easy to make. So it's definitely a keeper.

"Pantry Raid" Chicken Enchilada Casserole

I liked it and my husband loved it so much that he asked me to make it 2 more times within a week. My in-laws loved it, too and asked for the recipe. I used rotisserie chicken...all shredded. Used spicy chili beans(but wasn't spicy at all)...added 1 onion and 2 jalepenos. Added 2 TB chili powder and used 1/3-1/2 sour cream instead of cream cheese cause that's what I had at home. I used the "grandmother's buttermilk cornbread" recipe from this site and it was a perfect amount for what this recipe calls for. 9*9 might/can be a bit small depending on what/how much of other things you add but I managed to get all of it fit into that 9*9 pan without making a big mess. It did overflow a bit but I had foil underneath so it was not a big deal. I used sliced cheese(cheddar and colby jack) since I was out of shredded cheese.

Sweet Restaurant Slaw

It was too sweet for my taste. I used almost a whole head of cabbage and didn't quite use 1/2 cup of sugar and 1 cup of mayo instead of miracle whip but it was still too sweet. Next time, I think I will cut down on the sugar even more.

Slow-Cooker Pepper Steak

Sorry...I didn't like it at all. I had to just save the meat at the end and made fajita with it. I really couldn't tell what it's supposed to taste like. It was like "no identity" dish....at least to me.

Classic Macaroni Salad

I liked it. I cut the serving in half and followed the recipe exactly the same except the sugar. I usually cut sugar when I try recipes online since they usually seem a bit too sweet for me. I put a bit less than a quarter cup for half serving and it was really good. It was very similar to the amish potato salad recipe that I have. I think next time, I would put some eggs in for a chainge.

Authentic German Potato Salad

Quite easy to make and very good. The first time I made it, I followed the recipe very closely but cooking in bacon grease just scares me a bit too much. So now I just make it with olive oil. I add a little bit of the store bought bacon bits at the end though. When I made it exactly as written, it was good. My hubby liked it a lot, too but he likes it saucy so now I just add more sugar/vinegar mixture. No exact measurement(probably kinda like double or triple the recipe and then adjust a bit to my like). The result has been very good and I don't have to feel so bad since I don't cook in bacon grease.

Fresh Rhubarb Pie

Wow...I mean, really wow... I've had rhubarb pie only once and before that, I didn't even know what rhubarb was or what it tasted like. When I looked at it the first time, I didn't even want to try it because I wasn't really turned on by the color of it. My hubby kept saying I should try cause it's so good. I reluctantly tried it and I liked it a lot to my surprise. Last week, when I saw rhubarb in the store, I came home and checked for the recipe to see if I could make it. I found this recipe and after watching the video, I gained some confidence. I couldn't believe how easy it was. The video helped a lot, too but it really was just so easy. I followed the recipe to the T. I thought about omitting butter just like a reviewer said but decided to leave it in there to see how the original recipe would come out. Also I was afraid that it would be runny like some reviews said but it really wasn't runny at all. I guess it might have been or might be runny if you eat it not long after you bake it but I had to wait at least 4-5 hours till I was able to have a piece and it was truly so good and perfect. My hubby liked it of course. I still can't believe how easy it is and how good it is. Well, I don't know what color ripe rhubarb is supposed to be. Mine was red outside but green inside. The pie was kinda brown when done. It was just so good. I'll be making this again this weekend.

Slow Cooker Butter Chicken

I am not a big fan of Indian food or curry but my husband likes it and I know he really liked butter chicken he tried in the area. I looked at a couple of similar style dishes but decided to try this one because it seemed the simplest. My husband liked it and got a second as well but for the second, he added a little half and half and a little more salt. He said he remembered it being creamier. I thought that actually made it really good. I had a little bit, too with naan bread and to my surprise I quite liked it. I did make a little bit of change. I just used a whole bag of frozen chicken breast(2.5 lb) and like one of the reviewer suggested, added 1/4 teaspoon chili powder(and also 1/4 cayenne just for a little kick) and 1 teaspoon fenugreek?) and 9 cardamom pods and half of suggested tomato paste(also suggested by another review) and also 1 1/2 cup of refrigerated coconut milk instead of can(since we had an open carton already and the coconut flavor was getting a bit too overpowering after one and a half cups). I will definitely make it again and add some half and half again. Oh...it was quite spicy when I tasted at first but after adding the yogurt at the end, it wasn't that spicy anymore.

Green Chile Beef Tacos

I just tried this for dinner today. It's definitely easy and it tastes good, too. I used lean meat(London broil)?? and it was about 3lbs. I used a whole jar of green salsa but used only half of enchilada seasoning(I was out of taco seasoning and I was afraid that it might be a bit too salty if I put a whole packet of it.) and about 1.5-2 Cs of beef broth(I measured the first cup but I added a bit more just to cover up the beef so I'm not sure how much more that was exactly) and it came out good. I think I definitely prefer green salsa over red one. This one was very similar to carnita recipe from here but much easier and less ingredients.

Apple Pie by Grandma Ople

Well, this was my first apple pie. I baked rhubarb pie last week which came out so wonderfully. That recipe was also from this site. My hubby loved it, too and he asked me to try an apple pie next. Gaining confidence from that rhubarb pie, I thought "Why not". Well, I liked it enough but I didn't really see any 5 star quality at all. I'm more on the 3.5 side but didn't want to give 3 so I'm going with 4. I followed the recipe but used 9.5 inch pan. I used 8 medium size granny smith and for 9.5 inch pan, I thought it was the right amount or maybe just a little over. It did overflow but luckily I had the pie dish that had crust edge thingy. So it didn't ruin my oven(also I had a pan underneath just in case). My 9 inch pie crust was a tad short of filling the pie dish nicely so sealing the top crust and the bottom one was a bit of a challenge. Overall, it did come out fine but I'm not sure if I would try it again though. I thought it wasn't anything special or unique.

Smooth Sweet Tea

I'm really glad I found this recipe. I used a mason jar to steep the tea and then transferred that(after adding sugar) to a plastic pitcher with 6 cups of cold water in it already. For the first pitcher, I followed the recipe exactly but it was quite sweet for me. So the next pitcher, I put only 1/3 c sugar and it was good. Next time, I think I would probably put a quarter cup. I'm gonna have to make a pitcher of unsweetened tea to mix with the first pitcher I made.

Chicken Marsala

After reading all rave reviews, I was so looking forward to this dish. I liked the chicken itself but not the sauce. I actually couldn't stand the sauce at all. I've had chicken Marsala only one time and I don't think I was too fond of it and I guess this just proves that I just don't like chicken Marsala. I'm not a drinker so the strong alcoholic flavor made it worse. I followed the recommendations(cream, chicken broth) which should have diluted the alcoholic flavor but not quite enough. I liked the chicken itself a lot so I would have to find a different type of sauce for the chicken.

Chicken Paprikash II

It's not quite 4 but since there's no 3.5, I gave it 4. I guess I liked it enough but it's not quite what I expected. I had chicken paprikash last week at a local restaurant for the first time in my life and I quite liked it. It was creamy and the chicken was very tender as well. I didn't use the whole chicken but it was the sauce that I wasn't fantastically happy about. It was too sour...well more like tart...my hubby said. I thought it was the sour cream at first(I only had 16 oz tub so I tried to put "about" half of it in and I thought maybe it was actually a bit more than half and that made it sour. But I think it was the tomato. It was definitely not creamy like the one I had at the restaurant. Even though I liked it, I don't think I will be making it the same way again. I want to find a way to make it creamy and not as sour. Definitely I will not use tomato again of if I do, not as much.
