Zesty Slow Cooker Chicken Barbecue

Reviewed: Sep. 29, 2013
Somehow the review I left is gone so I decided to leave it again. The first time, I gave this one 4 stars but now am changing it to 5 stars after making this dish again. I used famous dave's sweet and zesty the first time and this time, I used original flavor. I think the original is better. Now mine comes out a bit soupy which disappointed me a bit at first but we actually used that soupy stuff for bbq spaghetti. Oh, boy was it good! We simply poured it over linguine, topped it with colby jack and chopped green onions(just like a restaurant in my areas serves except they serve it with pulled pork). I packed the leftover for my hubby's lunch and he said it was REALLY REALLY good even reheated. He said he had wished there were some more. So I made it again. This time, I did put one more piece of chicken(last time, I put 4 breasts and 3 tenders but this time just 5 pcs of breasts). It was not as soupy as last time but better for bbq spaghetti. I thickened the sauce a bit with starch(1 spoon of starch and 1 spoon of water- thought about doing it 2 but was afraid that it would make it too thick). I did add half an onion both times. It's just so easy to make and the result is so good. I think we'll stick to original flavor sauce from now. I thawed chicken in the water and soaked them in milk after that to get rid of chicken smell(Yes, I am quite sensitive to smell). So it adds a bit more work than called for but is definitely worth it. It goes well with tabasco, too or jalepeno.

Classic Macaroni Salad

Reviewed: Oct. 3, 2013
I liked it. I cut the serving in half and followed the recipe exactly the same except the sugar. I usually cut sugar when I try recipes online since they usually seem a bit too sweet for me. I put a bit less than a quarter cup for half serving and it was really good. It was very similar to the amish potato salad recipe that I have. I think next time, I would put some eggs in for a chainge.

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Oct. 3, 2013
What a disappointment! After reading some reviews, I was concerned about this being a bit too salty so I cut down the sauce quite a lot. I figured I could always add more if needed. For 4 pcs chicken, I used 8 ozs of sauce and 1/3 of ranch packet. Way too salty for me. I added sugar and that made it a bit better but still not quite. Not sure what I'm going to do with lots of leftover.

Garlic Chicken

Reviewed: Oct. 5, 2013
I loved it. It was really good. I love garlic but am not a huge fan of parmasan so I was a bit nervous. I had a couple of very little pieces done way before others and when I tried them, I was so thrilled. I used butter like some reviews suggested here and I put lots and lots of garlic. I also used panko bread crumbs cause that's all I had. I personally like panko better than other bread crumbs anyway. This is definitely a keeper. Oh, the only thing that I wasn't too crazy about is the time. I had to cook mine way too long. I don't know if it's our oven or the breast size or what but after 30 minutes, my chicken was not done at all. I think I left them in for at least 45 to 50 mins which dried out a couple of smaller pieces. I think next time, I would use tenderloins rather than breasts and cut down the cooking time.

Fluffy Pancakes

Reviewed: Oct. 5, 2013
Was good. After reading some bad reviews, I was a bit hesitant to try. I wanted to get buttermilk but didn't have time. I put only one apple cider vinegar though cause I was worried about the smell like some reviewers said. And yes, I agree that this serving portion is off. I was able to cook 4 medium size pancakes. They were quite fluffy and definitely much better than mix in the box. My hubby agrees. Update-Okay, we tried it with buttermilk. Wow...what a difference! It really is much better. I think I will change it to 5 stars now. We don't eat pancakes very often. I think today was the second time(after yesterday) this year. I can see myself making this every weekend now. I doubled the portion today and it made 8 pancakes. We had 3 leftover so we put them in the freezer. We'll see how they are when microwaved.

Slow Cooker Mashed Potatoes

Reviewed: Oct. 5, 2013
The dish itself was okay. Definitely nothing to write home about but it was all the work I had to do that makes me not want to give this more than 2 stars. When I saw the good rating, I had high hopes. I personally thought it was just like the box stuff. Didn't see any huge difference. And the fact that you have to cook the potatoes and mash them with other ingredients BEFORE putting in the slow cooker doesn't make any sense. Before I tried this recipe, I said to myself "Wait a minute, it looks like mashed potatoes are done in step #1.Then why put it in the slow cooker when it's already done? And then I thought MAYBE putting it in the slow cooker would actually make some difference in the flavor or something so I decided to give it a try. Nope, there's no difference at all in the flavor. I think I actually liked the flavor of "before slow cooker" better. It just doesn't make any sense that you make mashed potatoes and then put that done dish in slow cooker for more time. Why? It's just so redundant. Now I have one more big dish to wash and thinking of all the work and time I wasted to make mediocre mashed potatoes just upsets me so much.

Grandmother's Buttermilk Cornbread

Reviewed: Oct. 8, 2013
OH, MY GOSH! This is WONDERFUL! I can not believe how good it was/is. I followed the recipe exactly but added fresh corn and chopped pickled jalepeno in the batter. I melted butter in a big stainless mixing bowl. I put a little bit of water in a frying pan and put that bowl in the pan. And then I did all the ingredients mixing in that bowl after melting the butter just like the owner of this recipe suggested. I was concerned about the amount of sugar, too especially after reading some reviews but I decided to follow one reviewer's advice saying that she doesn't like too sweet stuff but this one is definitely not too sweet. I have to agree with her. I can't stand too sweet stuff either. Well, I don't even use syrup when eating pancakes cause I think they are good enough without syrup. This one, I thought was perfect when it comes to sweetness. Don't get me wrong. It was sweet but it was delicious sweet NOT disgustingly sweet or too sweet. Mine took a long time actually. It could be our stove or maybe the fact that I added fresh corn and jalepeno, or maybe the pan I used. I didn't have 9X9 pan so I used a bread pan. So it took good 40 minutes at 375 for me. I was worried that it might have dried out but it was PERFECT! My hubby loved it, too. It went so well with tortilla soup I made from this site. I am definitely making it again. Yum, yum, yum..

Slow Cooker Carnitas

Reviewed: Oct. 18, 2013
Love it, love it, love it.. not just for the taste but also because it's so easy to make. My husband couldn't stop saying "Oh, that pork smells so good" while it was cooking in slow cooker. Since I don't like cinnamon, I omitted that but I followed the recipe exactly. Well, I guess I did use real garlic rather than garlic powder and I tripled the seasoning after reading the reviews. I used sirloin roast though because I like lean meat. I think I would probably let it cool a while before I shred it at the end because it did dry out a bit. But still, it was wonderful. My husband thought it was THE BEST and so much better than Qdoba or Chipotle. I made the lime rice from AR and quac, salsa...they all went well together. We used it as soft taco filling and also on a nacho platter. 4-5 pounds pork makes plenty. My hubby and I had two big taco meals and two big nacho platter and we still have some leftover. We will definitely make this thing again and I just can't wait for the sirloin lump to go on a sale again.

Lime Cilantro Rice

Reviewed: Oct. 18, 2013
My hubby loooooved this rice. He said it's so much better than Chipotle rice. Well, I admit. I did change a bit but I think this recipe does give a very good basic?? idea. Well, my hubby doesn't like cilantro too much so I probably used about 2-3 TB spoon of it. For lime, I didn't put any zest it in cause I wasn't sure if I would like it. Oh, and I did use chicken broth just like other reviews suggested. My hubby loved it but I thought it was okay(still more than 3 stars though). I didn't like the butter smell too much. I'm a little too sensitive to smell so next time, I may try different type of oil. It was good in taco for sure. It didn't have whole a lot of flavor on its own but as a filling, it was definitely good. My hubby couldn't stop saying how much he liked this rice. Oh, and it's so easy to make. So it's definitely a keeper.

Quick and Easy Alfredo Sauce

Reviewed: Oct. 18, 2013
My hubby really liked it but I thought it was okay. I followed the recipe exactly except using fresh garlic. I thought it was a bit too salty and grainy(due to parmesan) I didn't like the texture of Parmesan in it too much. I was a bit surprised that my hubby liked it so much though. Since he liked it so much, I'll definitely make it again but next time, I think I'll use shredded Parmesan not the powdered one. I added asparagus(sauteed in garlic and olive oil) on top with grilled chicken(store bought). I'm really curious how it would come out with the shredded Parmesan. I'll update once trying.

Belgian Waffles

Reviewed: Oct. 18, 2013
I didn't really know what to expect cause I didn't know what Belgian waffle was like. It was good but for all the work I had to do, I was a bit disappointed. I think it's that a bit soury smell/taste from yeast that didn't appeal to me too much. My hubby looooooved it though but it's a bit too much work so I'm not sure if I would ever make it again especially when I know that Fluffy pancake from this site is so good and easy to make for breakfast menu. Even my hubby said not to worry about making it again cause he was there during all the prep time. I may not be trying this again but for those who don't mind all the work, it would be worth trying. For some people especially those experts or those who love cooking, they may even think the prep work isn't so bad. I did make the batter the night before, too like some reviews suggested. I don't know if that made any difference in the flavor though.

Cranberry Sauce

Reviewed: Dec. 7, 2013
I followed the recipe exactly but I thought the oj was too overpowering. I added a little bit of allspice, clove and nutmeg and it was better. After the alteration, I would give 4 stars but before, high 2 or low 3.

Refried Beans Without the Refry

Reviewed: Dec. 8, 2013
I like beans but I just don't like refried beans. When I go to Mexican restaurants, I always ask them to leave them out because I just don't like them at all. We've been cooking/eating Mexican food a lot lately using slow cooker and after seeing how many reviews this one had, I just wanted to try it for my husband cause he likes refried beans. To my surprise, I liked them very much, too. They were really good and I thought they completed my Mexican meals. I am looking forward to having them again with my slow cooked carnita(which is also from this site) for dinner tonight(we had them for lunch as well). I think just simple bean burrito with some rice and cheese would be good, too.

Grandma Jeanette's Amazing German Red Cabbage

Reviewed: Dec. 31, 2013
Oh, I so wanted to like it. Was I the only one who found this to be too bitter? Because of that bitterness, I just couldn't really enjoy it. It may be just the cabbage but I wonder what can be done to get rid of that bitterness. My hubby liked it although I don't think he loved it. I doubled the recipe after reading rave reviews so I wonder if that made it even more bitter.(having too much cabbage...I don't know...). I will try one more time since I still have half of the cabbage left and see if it comes out any better. I was also a bit surprised at the color. I thought it would be bright purple color just like you see at a restaurant or store bought ones but it wasn't.

Slow Cooker Butter Chicken

Reviewed: Feb. 15, 2014
I am not a big fan of Indian food or curry but my husband likes it and I know he really liked butter chicken he tried in the area. I looked at a couple of similar style dishes but decided to try this one because it seemed the simplest. My husband liked it and got a second as well but for the second, he added a little half and half and a little more salt. He said he remembered it being creamier. I thought that actually made it really good. I had a little bit, too with naan bread and to my surprise I quite liked it. I did make a little bit of change. I just used a whole bag of frozen chicken breast(2.5 lb) and like one of the reviewer suggested, added 1/4 teaspoon chili powder(and also 1/4 cayenne just for a little kick) and 1 teaspoon fenugreek?) and 9 cardamom pods and half of suggested tomato paste(also suggested by another review) and also 1 1/2 cup of refrigerated coconut milk instead of can(since we had an open carton already and the coconut flavor was getting a bit too overpowering after one and a half cups). I will definitely make it again and add some half and half again. Oh...it was quite spicy when I tasted at first but after adding the yogurt at the end, it wasn't that spicy anymore.

Slow-Cooker Pepper Steak

Reviewed: Feb. 15, 2014
Sorry...I didn't like it at all. I had to just save the meat at the end and made fajita with it. I really couldn't tell what it's supposed to taste like. It was like "no identity" dish....at least to me.

Sweet Restaurant Slaw

Reviewed: Feb. 16, 2014
It was too sweet for my taste. I used almost a whole head of cabbage and didn't quite use 1/2 cup of sugar and 1 cup of mayo instead of miracle whip but it was still too sweet. Next time, I think I will cut down on the sugar even more.

Basic Ham and Bean Soup

Reviewed: Feb. 16, 2014
I liked it but I think a little more beans would be/would have been better. I used spiral ham(brown sugar glazed) so it was a bit sweet which didn't go quite well in this recipe but I think it would be/have been really good with the regular ham. I'll definitely try this recipe again with more beans and regular ham.

Angel Chicken Pasta

Reviewed: Feb. 21, 2014
I wouldn't say I loved it but I wouldn't say I hated it either. It was okay. Not sure if I would make it again though. It was still a bit salty even though I doubled the recipe with only one dressing packet.
