I was craving pancakes this morning but never have boxed mix on hand. I always turn to All Recipes for anything I want to make from scratch. I followed this one exactly. The only thing I did differently was in the mixing. I beat the egg with a whisk, added the milk and then the melted butter. I then whisked this into the dry, sifted ingredients. It almost immediately puffed up. I thought it was too thick but tried a first batch anyway. I was right. It was too thick. I added a bit more milk; whisking it in and this helped immensely.
The end result was satisfying enough but I wouldn't rave about them and will probably try a different recipe next time I want pancakes. One of the biggest tricks to perfect pancakes is having the pan oiled and heated properly.
