Bloody Mary Chicken

This is a great basic recipe. I enhanced it somewhat after reading the other reviews: 1 chopped onion 1 cup vegetable stock 1 cup chicken stock 2 boxes frozen green beans 4 thighs 4 wings 2 drumsticks seasoned the night before with TexJoy steak seasoning. 1/2 32 oz. bottle of Zing-Zang Bloody Mary Mix 1/2 32 oz. bottle of Red Eye Horseradish Bloody Mary Mix Served over rice with cornbread on the side.

White Bean Chicken Chili

I had some leftover turkey from Thanksgiving so I thought I'd give the recipe a try. Very good! I tweaked it a little by adding some ancho chile powder to taste, doubling the cumin, and substituting one can of white pozole and one can of yellow pozole for the beans. I also omitted the corn. To thicken, I dissolved about one tablespoon of masa in a 1/4 cup of warm and added it to the pot, stirring well, and simmering for about 20 minutes. Will definately make this again!

Menudo Rojo (Red Menudo)

This is an excellent Menudo recipe. I added two pork feet and some bone marrow in step no. 2, making a richer broth. Also, I bought whole tripe and washed it first in several exchanges of cold water, then rubbed in the juice of two whole limes and about two teaspoons of Kosher salt, washed it again and sliced. I did this only because this is how I learned to prepare the tripe.

Colleen's Slow Cooker Jambalaya

Being a stay-at-home dad, I'm always on the lookout for slow-cooker recipes. This one is superb! I did use chicken thighs instead of breasts because I had some in the freezer. Also, I used 1 3/4 lbs. of andouille simply because I love the taste. My daughter made some cornbread to accompany the dish. It's almost as good as my slow cooker pozole I posted a few weeks ago. : ) I will definately make it again!
