Quick and Easy Green Chile Chicken Enchilada Casserole

Wow! We just finished this dish and it was delicious!! I followed a couple of other reviewers tips; I didn't char the tortillas, I boiled the chicken with garlic and cayenne pepper in the water, I mixed the chicken and sour cream before layering, and after the first bit of sauce I dipped the tortillas in the remaining sauce. It was super!!

Cranberry Sauce

I love simple & tasty recipes. This checked both those boxes! Tip: keep stirring on medium heat until the proper consistency is achieved. I added a spoon or three of pineapple bits while it was cooling in a bowl. Yummy; for year-round we put it in our oatmeal in the morning. Not just for Thanksgiving :-)

Pork Tenderloin with Apples

Wish there were 10 stars to give it!! This was so scrumptious!!! I followed the recipe with only one super slight change, I used 3 apples and didn't peel them. I live in Washington State and we have awesome apples and wine. I used Honeycrisp apples, and a dry Chateau Ste. Michelle Reisling. OMG!! It was have heavenly!! Oh yes, I did what someone else mentioned and sliced the tenderloin and put it into the apple mixture for a few minutes before removing from the heat. Thank you for this recipe, highly recommend and will make again & again!!

Beef Stew VI

Very tasty! I should have added more cornstarch because I would like it a little thicker. The rosemary adds a nice taste. Very pleased, will make again! P.S. I forgot to add the celery, will try again with that. And also I used 'no salt added' beef stock instead of bullion cubes. My husband appreciated my lower sodium effort.

Asparagus Mushroom Bacon Crustless Quiche

I didn't have the listed ingredients so I improvised. It still turned out awesome!! Didn't have Heavy Cream used ~ half a cup of unsweetened coconut milk, didn't have Bacon used leftover pork burger, didn't have asparagus used leftover green beans and cherry tomatoes, didn't have Swiss Cheese used an Italian blend. Moral to this story; a good recipe with all sorts of ingredients!!

Zucchini Hummus

Very delicious! I had to make a couple of changes. I didn't have any pinto beans so I used kidney beans instead. I also added a tablespoon of sesame seeds, because I didn't have any tahini. And to spice it up a bit I added red pepper flakes, and I used smoked paprika. I also added some flax seed just because I'm trying to get it into my diet more. Loved it so much I added it to my recipe box!!
