Texas Brownies II

These are definitely a cake like texture , but more dense and moist than cake. I used 6 heaping tablespoons of cocoa. I didn't have buttermilk but you can make buttermilk by squeezing lemon juice into your milk and let it sit for 5 minutes. The amount of batter was perfect for the pan size stated in the recipe, 12x18 jellyroll pan. I lined it with parchment paper and sprayed with non stick spray. I did not use the frosting. When the brownies came out of the oven I put mini marshmallows on top with chopped pecans. I melted a bag of chocolate chips with 1 cup of chocolate hazelnut spread. I drizzled this on top of the marshmallows .......heavenly, delicious ...out of this world!!

Puffy Chocolaty Chip Cookies

These cookies are awesome. I added chopped dried cherries and chopped pecans.I will be giving these as gifts over the holidays.Some reviewers said the cookies went flat. I think it's important that you measure the flour before sifting rather than after...just a hint

Golden Sweet Cornbread

This was good but a bit crumbly.I think next time I will add one more egg.I added frozen corn and fresh chopped jalapeno. Was really good.

Blackened Salmon Fillets

This recipe is awesome.The only change I made was to marinate the salmon in olive oil and lemon juice .( just a bit of lemon) for a few hours.I used my cast iron griddle and turned the heat up high........YUM !!Squeeze some lemon on top.
