Hungarian Goulash II

This is always a hit at my house. Even in the middle of summer, in the heat when all I want is something cool, folks request this dish. I add a little more brown sugar than is called for, and I load it up with potatoes, carrots, and parsnips (very important!!!). Nothing better than assembling at night, plugging in when I wake up, and then enjoying the ridiculous aroma in the house - and of course a wonderful dinner!

Cream Cheese Frosting II

Amazing! Put it on my carrot/pineapple/raisin cupcakes, this is now going to be my go-to Cream Cheese Frosting recipe. Warning, it makes a HUGE amount! I guess I'll just have to make another cake very soon. ;)

Baked Slow Cooker Chicken

Best whole chicken ever. Instead of using wadded up aluminum foil, we rested the chicken on potatoes! Genius and delicious! Coat with olive oil. Also throw some carrots in there, you won't regret it!

Red Chard and Caramelized Onions

AMAZING! We used more brown sugar and omitted the olives, but added fresh jalapenos at the end (with the seeds). I would happily make this dish every night with any dinner, but it was a marvelous side dish with slow cooked whole chicken. WOW.

YUM! Added appx 1/2 cup chopped walnuts. My kid is very picky and she inhaled it! Very easy, made very good use of overripe bananas we never got around to eating!

Sweet Lamb Curry

Yum! We used olive oil because it was all we had around... I would actually decrease the cooking time if you're not a fan of crunchy cookies, but we love them both ways! Next time we're going to try 8 minutes and see how they come out.

Cornish Hens with Rice Dressing

I actually simplified this like crazy, my daughter is picky so I left out mushrooms, celery, onion and marjoram. To my surprise she gobbled it up! It was SO easy to make, what a perfect Sunday dinner for 2!

Rosemary Seasoned Lamb

I had some lamb breast in the freezer and decided to try this. I used coarse sea salt and didn't blend the seasonings but just mixed them together and coated both sides. AMAZING flavor. I think the coarse sea salt really helped. Served over rice. Yum!

Ginger-Orange Squash

I love all veggies but this was a bit odd to me, maybe too much orange concentrate for my taste? Anyway, I ended up making plain mashed potatoes and blending them in and it was really good in the end!

I liked this! I bake gluten free and it worked fine with gluten free flour. I also used applesauce instead of oil. It was very moist and delicious. :)

Fantastic! I used gluten free flour and it came out perfect, which doesn't always work for gluten free! Also used fresh pureed pumpkin and left out one egg. I'm hooked!

Soft Christmas Cookies

Fantastic! I try and bake gluten and dairy free as much as possible, and this recipe works fantastically with Whole Foods brand gluten free baking mix! In fact, they almost taste too good, I felt like I was cheating and eating wheat! Great recipe!!! We didn't use cookie cutters, just made little cookie circles and pressed some sugar sprinkles in . YUM! :)

Chicken Coconut Curry

Wonderful recipe! I added chunks of daikon radish (potato would work but I like the texture of daikon). I used dried cranberries instead of raisins, and added some kale for color and taste. What a tasty and hearty meal!!!

Gingerbread Men

WOW! These came out great as a gluten free cookie! We used 2c soy flour and 1 1/2 c white rice flour. Awesome! Stuck the dough in the freezer for about 20 minutes and it worked fantastically! Easy to cut too, we did them by hand and with a little flour dusting every now and again and a clean knife, it was really easy to work. Will definitely make these again, and again! :)
