Crustless Spinach Quiche

Delicious- but how could it not be with 3 cups of cheese! We ate it wrapped in tortillas spread with cream cheese.

Turkey Wild Rice Soup II

this is delicious. Extra veggies don't hurt! And for lack of half//half and cream, I used 2 percent milk. The lemon is a good addition.

Skillet Chicken Picante

easy to make and easy to modify! I added extra spices and only half as many crushed tomatoes. Quick and tasty over rice with cheese and tortillas to serve along.

Easy and Quick Swiss Steak

I had a 2 lb round steak that I was needing to cook, so I scaled this back a bit, eliminated the green pepper (hubby hates it) and baked it in the oven for 2.5 hours. We sliced it thin and it was delicious.

This is yummy and healthy and comes together quickly. I didn't have a green pepper or white wine, so I subbed carrots and vodka (weird subs, I know--but it turned out excellent anyway).

Marshmallow Fondant

This is so much fun! I did need butter to keep it from sticking to the counter. I did some fondant figures and while I was working with different colors of fondant, other pieces would dry out. I would knead in butter to revive it--worked perfect!

Blueberry Cream Muffins

I used low fat sour cream b/c it was all I had. And i halved the recipe to make 12 muffins. It made about 14 actually, and I filled the muffin cups to the top! Delish!

I've made these for several years. Love them! Great way to use up cabbage, serve something different. There are lots of ways to change it up--you can use your favorite homemade bread/roll dough recipe. I never use MSG, but different seasonings like sage, parsley, red pepper, etc. I also like to make it with half ground turkey and half pork sausage, but ground beef is good too. I always serve it with soy sauce (probably TOTALLY against what native Runza-eaters do, but I'm American, right? At least soy sauce is classier than ketchup, ha ha).

Old Fashioned Sugar Cookies in a Jar

Not my favorite for roll-outs. They're fine for drop, but need less butter or more flour for a real roll-out cookie. Tasted great though!

Summer Grilled Cabbage

Easy, easy to plan and take camping too. I've made this lots of times and now I've simplified it to slicing up cabbage into foil packets (the thinner the quicker to cook), drizzling olive oil and a sprinkle of seasoning and then sealing it up.

Mel's Awesome Brownies

This is what I call a Texas Sheet Cake, not brownies. There are better sheet cake recipes out there than this, but having said that, this is super easy and pretty decent. Next time I would probably add a dash of salt to the batter and some vanilla. You can sub sour cream for the buttermilk, too.

Southwestern Chicken Lasagna

Not so much a lasagna with defined layers as it is an enchilada casserole. The tortillas do mush up but not in an icky way. I would go easy on the basil/oregano. I ended up using a lot less. THis is a great recipe idea and easy to change it up to the ingredients you have on hand. This time I made it with ro-tel and crushed tomatoes instead of using tomato sauce. Tasty!

Rempel Family Meatloaf

THe texture is nice--the meat is not chewy. I think what made it this way was the added cheese and crackers. BTW you can't really taste the cheese. My meatloaf turned out kind of crumbly.
