Saltine Toffee Cookies

Absolutely delicious and crazy easy! After reading many reviews, I did use no-stick aluminum foil on a sided cookie sheet and had no trouble releasing these. Left them on the counter for about 5 hours before breaking into pieces. The butter/sugar mixture was not stirred during the boiling process and turned out perfectly! It just soaks into the crackers while baking......wonderfully crispy and yummy. You won't be sorry you tried this treat!!!

Chex® Pumpkin Pie Crunch

This is really very good. Instead of using the microwave, I baked it in the oven at 250 for about 30 minutes, stirring twice. It turned out nice and crispy, and has stayed that way since making it 4 days ago. I'll be making this one again!

Bodacious Broccoli Salad

This is to die for! I cooked the bacon in the microwave to get it super crunchy, and had to eliminate the lemon juice because I was out of it. Didn't matter.....it was delicious. Will be making it again this weekend for a bbq. Can hardly wait!

Tomato and Mozzarella Bites

A terrific appetizer! Took to my grandson's birthday party where they were serving subs, and everyone liked them. Such a pretty presentation, too!! My grocery store didn't have fresh basil so I subbed baby spinach and used basil-infused olive oil. We loved it.

Sweet Restaurant Slaw

Delicious! Can't say much more than has already been said. Fabulous by itself or piled onto a sandwich or hot dog. This is a definite keeper for us. Easy, inexpensive, and just plain good stuff.

Black Bean and Couscous Salad

I can't believe I never got around to rating this! We LOVE this salad. It's refreshing, easy, keeps well, and healthy. What more can you want? Be sure to drain and RINSE the black beans to keep the couscous from turning grayish. Terrific stuff.

Orange Cream Milk Punch

Actually does taste like a Dreamsicle. The kids at Easter loved it and a second batch was needed. The adults....not as much, but we had none left after two batches of it. Very good for a party with kids.

Chocolate Cavity Maker Cake

Whew! This is a serious chocolate cake. Heavenly if you're a chocolate lover. I used mini chips as suggested, and every bite was moist and dense. I used chocolate ganache poured over it, and it truly sent it over the top. Great for those special occassions.

Cuban Midnight Sandwich

This is definitely one of our favorite sandwiches. I've made it so many times, I don't even need the recipe any longer! The flavors blend beautifully, and the outside of the roll gets super crunchy with the fruity olive oil taste. Even though I'm always anxious to take that first bite, I force myself to grill it slowly to make sure it's warmed through completely. It's a meal in itself.

Beer Bread I

Fantastic bread....soft and chewy inside and a little crunch on the outside. Had to make my own self-rising flour and used 1/3 cup of sugar. Poured melted butter (about 1/2 stick) on top before baking. The two of us devoured it in 2 days. It's also great grilled in butter, too. Definite keeper for me!

Baked Parmesan-Crusted Chicken

This was delicious! The only change made was to use Lemon-Garlic Panko bread crumbs. Hubby loved it, I loved it, and the kitties wouldn't leave us alone while eating! With all the extra garlic from the bread crumbs, it really had our taste buds going while baking. Good, good stuff.

Sausage Cheese Dip

This is delicious! The first time I made it, it was for 6 adults and 5 children, and it was devoured. Makes a lot. Two adults asked for the recipe. It has a little kick to it, but not too much for kids. Even leftover dip reheated well and tasted great the next day. Wonderful!!

Traditional Salisbury Steak

Simply delicious and easy. Hubby went crazy for it, and wanted more! The only change I made was to omit the mushrooms...don't like 'em. And I let it simmer for about an hour. Moist, tender, tasty. Very, very good!

Cheesy Potato and Corn Chowder

Delicious, wonderful, homey, comforting. What more can I say? I changed nothing except added leftover ham diced up. It's very very good and keeps well for leftovers, too. Ya gotta try this one!

Tomato-Cream Sauce for Pasta

Simply delicious. All I added was fresh spinach and cooked italian sausage. Threw it all together with "Quick Gnocchi" from this site (a winner, too), in a casserole and baked it. Fantabulous dinner and leftovers were wonderful, too.

Quick Gnocchi

This was FANTASTIC! Very easy, very fast, and very very good. I used the "Tomato-Cream Sauce for Pasta" (with spinach added) from this site. Added cooked Italian sausage, dumped it all in a casserole and baked it. It was just wonderful stuff! And the leftovers were even better.

Blueberry Sour Cream Coffee Cake

This is one delicious cake. I've made it three times...the first two in the bundt pan and had a very difficult time getting it out in one piece. The third time was a winner in a 9 x 13 pan, and that's the way I'll make it in the future. Wonderful recipe!!

Fire and Ice Pasta

Following everyone else, I decreased the oil to 3/4 cup. This was WONDERFUL! We enjoyed it so much, and the leftovers were even better. Not only is it good on pasta, but it's great on Italian bread, pita, even crackers. A very versatile recipe.

Awesome Carrot Cake with Cream Cheese Frosting

A wonderful carrot cake, but takes a while to grate those three cups of carrots! Worthwhile, though, because it's moist, flavorful and just plain yummy. Brought it to work, and took the empty dish home the same day.

Feta Cheese Foldovers
