After nearly 13 years as an Allrecipes member, I am honored and astonished to be chosen as a 2013 member of the ALLRECIPES ALLSTAR BRAND AMBASSADOR program! Now that we're retired, I enjoy cooking so much more than before. No more hurry-up dinners! I just love meals that take all afternoon to simmer away....especially in the colder months. They make the house smell great, and just give me a warm, fuzzy feeling.
My favorite things to cook
Most things Italian, definitely. I could seriously eat pasta every day! But, my meat-loving husband doesn't share that particular passion. We also like Mexican food. Love soups and casseroles, too!
My cooking triumphs
This mistake turned into a fantastic triumph. As a just-married cook, I decided to have a bunch of neighbors over for a roasted turkey, full-out dinner. I stuffed the bird, got it into the roasting pan, and let it go. When it came time to baste it, it just didn't look right. I could NOT figure out what was wrong with it. Finally got out my cookbook looking for a picture, and realized the bird was in the pan upside down. I successfully got it turned over, but, man oh man, that was the most moist turkey breast ever!!! Guess how I make turkey now? :-)
My cooking tragedies
Well, I was making sausage ball appetizers for my then-husband's 40th birthday party. Those things are so hard to mix, I ended up mixing by hand. I always used to wear fake nails. Okokok, you guessed it. I was almost through with the rolling, and discovered my pinkie nail was missing! Had to go through each and every one until I found it to throw it away. Can you imagine someone chomping down on THAT?

Mini Rotini with Carrots and Peas
Very good. We both enjoyed it. I caramelized the leeks just to add more flavor. There are only two of us, and because we love vegetables, I kept all the ingredients the same except halved the pasta. It was just right for us. I'll definitely be making this one again!

Elbows Mac and Cheese with Tuscan Herb Sauce
We really enjoyed this dish. It was rich and creamy and yummy. The Tuscan Herb sauce is delicious, and the cheesy goodness just adds to it. The picture I took is before we dug into it just to show the wonderful cheese on top. So easy!

Grilled Salmon Greek Pitas
Since I don't like salmon, I decided to use chicken for this dish. It worked! The sauce was very good with chicken. It was a very good summer meal that was so easy to prepare with virtually no clean up. A win-win.
