I had never made lentil soup, but got a great deal on some red lentils- so I searched for a recipe to use them in. Boy am I glad I found this one! My daughter goes crazy for this! I just made this again tonight along with the recipe for "Grandma's Corn Bread" (another superb one). I always believe in trying any new recipe exactly as written the first time around- and this is very good just as it's written. That being said, once my daughter told me she loved it, I decided to slip in a few more veggies the next time around. I now add pumpkin puree if I have some in my freezer (I also put this in my chili- bulk it up, add all kinds of vitamins- and you'll never notice it's there), I add bell peppers if I have any on hand, some Organic Better Than Bouillon, and Marjoram (one of my favorite soup seasonings). Tonight, I also added a diced sweet potato, just because it was sitting on my counter. :)
