Pizza Soup II

I just finished eating a bowl of this pizza soup and the pot is calling me to eat more. However, I made several adjustments to it. I used ground pork instead of Italian sausage and I did not use pepperoni. I used chicken broth instead of water and added enough to make it more soup like. I added 4 big cloves of garlic, chopped and 2 tablespoons of freshly dried oregano and basil. Then topped it with crumpled, crispy bacon, parm cheese, black olives and purple onions. Outstanding!

Baby Spinach Omelet

Zucchini Herb Casserole

This was excellent though I made several changes. I grated 1 1/2 cups of equal parts parmesan, pepper jack and cheddar cheese. I used garden tomatoes mixed wiht canned stewed tomatoes to make up the 1 1/2 cups tomatoes. I bumped up the garlic to 3 cloves, 3 T fresh basil, 3 T fresh parsley. I added 1/2 can french fried onions to the mix and the other half on top of casserole the last 5 min of cooking. With these changes, this recipe was superb!

Spinach Quiche

I usually like a crusted quiche but I decided to try this one because of so many good reviews. My husband and I both agree...it was not good. The spinach seemed warm and mushy like the spinach out of a can. I think the combination of cottage cheese in this recipe makes it too moist thus making the spinach have a wierd texture. Not a big fan of the cheddar cheese in it either and I definitely missed having a crust.

Peanut Butter Pumpkin Bread

I was skeptical of mixing peanut butter with pumpkin, though I love each of them seperately. They were great! I mixed 1/2 brown sugar and 1/2 white. I also used 1/2 white flour and 1/2 spelt. I also halved the recipe and made 12 muffins. Baking them at 400 for 20-25 minutes.

Cajun Style Red Bean and Rice Soup

I made this recipe without the sausage because I think sausage overpowers the other ingredients. I also used smoked ham hocks and cayenne pepper. No extra salt needed. Loved it! Served it with a garlic stuffed pot roast and rice. Yummy!

Yummy! I made the crust out of whole wheat and flax seed mill and added pecan chips instead of raisins and coconut. They were a big hit with a pot of Hazelnut coffee!
