Chicken Breasts with Balsamic Vinegar and Garlic

Just tried it and used tips from other reviews. Husband loved it. Used Whole Wheat Angelhair pasta and the sauce hide the "healthy" pasta. Oven roasted zuchcini and summer squash with olive oil, garlic, salt&pepper as a healthy side. Sprinkled Wondra over chicken tenders and removed them to a covered plate while mushrooms and sauce cooked. Will do this again. This is a great site.

Peg's Summer Squash Bake

Had two yellow squash and 1/2 eggplant in frig, what to do? Found this recipe, sliced squash, eggplant, spanish onion using mandolin at 1/4", cut up red pepper and crushed garlic. EVOO, Salt and Pepper and baked about 45mins. Served with Balsamic marinated port tenderloin. Oh, did use the cheese too. Nice to get away from just sauteeing squash.

Quick Chicken Piccata

Tried this tonight and served it over fetticini. Added grated parm. when thickening sauce and when served. Also used fresh grated garlic after crushing capers. The aroma was wonderful. Did not find it too lemony. It wasn't bad but it wasn't great.

Chicken with Artichokes and Sundried Tomatoes

Very enjoyable! My husband 's first comment was "I Love It!". This is coming from a man who does not care for artichokes. I too loved it as I had all the ingredients in my kitchen. I followed the suggestion to use the oil from the sundried tomatoes and used thin spagetti instead of angel hair because that is what I had open. I added the cooked pasta to the skillet when the chicken mixture was cooked. Will make this again because most times I have everything and it was delicious.

Sesame Noodle Salad

loved this side and didn't change anything except I did not have chili oil and used crushed pepper flakes. Will do again. Very pleeasat. Served with grilled Slamming Salmon from this site. Great combo and will try toasting sesame seeds before using and agree with adding seeds as serving.

Rosemary Ranch Chicken Kabobs

very tasty, reduce salt, as it is not needed due to Rranch dressing and did not cut chicken in cubes. Used chicken tenders and grilled them whole as they are so small already. Very moist, served with green salad with Ranch Dx. and lemon bowtie pasta salad.

London Broil I

Tried it last night on a New York strip steak. I am never sure of the quality of the steak as we have been so disappointed in prior attempts to make a "great" steak at home. That was until last night. We were amazed how tender and flavorful the meat was and will make this marinade again.

Balsamic Roasted Pork Loin

Had some inexpensive Progresso Balsamic Vinegar and used pork tenderloin. We were very pleased with the results. Did not mind the vinegar aroma and plan to do this again. Will try it on the grill like Nona did in her review.

Sundried Tomato Chicken Sausage Ragu with Roasted Eggplant and Tomato

What a great recipe. Only change I made was to roast the veggies about 10mins. longer to get them browned and sweet. Used Stop&Shop "Enjoy" storebrand Marinara sauce. Served it over mini penne and topped with Pecorino grated cheese. Will do again, enjoy the different flavored chicken sausages.

Chicken with Quinoa and Veggies

Was pleasantly surprised to find we liked Quinoa, mostly my husband raved about this recipe. I chose to us chicken tenders, sliced into thirds. I also took the time to blanch and peel cherry tomatoes. This kept the tomatoes intact and sweet little bursts of flavor. Husband wants to try it using shrimp or pork. Looking forward to making this again.

Simple Time Pork Chops

Very simple and very good. Had thin chops so I reduced the time and they came out very moist. I had some French's Onion pieces in my pantry and sprinkled them on top for the last 5 mins. of baking. Added a little crunch and improved appearance. Will do again. Served it over Quinoa flavored with rosemary, diced yellow pepper and sundried tomatoes.

Baked Rice Pudding

I also made this for our traditional Christmas Eve dinner. It was so much like my Grandmother's. My son loved it. He is in his forties and loves all the old traditions. We add cream over our portion and this takes it over the top in flavor and moisture.

Pumpkin Roll I

It was kinda scary when it came to flipping the cake onto the confectionary coated tea towel but it did not crack and the final end result was so worth the feaar factor. Will surely try this again.

Broiled Tilapia Parmesan

It appears this recipe has been around for quite awhile but I am so glad I found it and tried it tonight. I live near the shore and have a great fishmonger nearby. My fish was extremely fresh and the topping was perfect. I added the panko crumbs on top of the cheese mixture and broiled it 2mins. It was perfect and gave a mild fish a ton of flavor. I judge fish flavor by my husband not requesting Tarter Sauce. This was a winner and a total surprise since I never considered using cheese with fish. Will surely use this again with suggested options. Thank you Phoebe.
