Beef Enchiladas I

OK but for best results fry the tortillas lightly in hot oil for about a second on each side to make them softer, then dip the tortillas into the warm sauce and pour remaining sauce on top,use authentic mexican cheese instead (cotija or queso quesadilla)

Have to completly disagree with the person who said "tastes just like chile rellenos at restaurants". Way too americanized. Wont be trying this again. Sorry.

Tres Leches Cake

WOW! I made this for my company christmas potluck. It was a big hit. I separated the batter into two 8" pans and filled with vanilla pudding in between. I was worried about the person's comment saying you should use confectioners sugar instead of granulated or it would come out bad. I didn't have time to go to the store and buy confectioners sugar so I took a chance. The cake came out perfect. I think that person just didn't follow the recipe exactly. Thanks for the recipe!

Darra's Famous Tuna Waldorf Salad Sandwich Filling

I have to say I was not to fond of the taste when I first tried it. After letting the filling sit in the fridge for a while it tasted better. I added some sliced red grapes and spread it on a toasted whole wheat bagguette. I didn't have any swiss cheese on hand so I sliced some sharp cheddar and it was great. The flavors all blended well together.

Fruited Curry Chicken Salad

AMAZING!!! I made it for a picnic on the beach. Served it on toasted whole wheat bagguettes with sun chips. My husband, who doesnt like curry, apples or celery raved about it. I did omit the raisins because I feared I'd be pushing it with him if he saw raisins in the salad. Next time I will add them though. Thanks for the recipe!!!!

Chiles Rellenos (Stuffed Peppers)

Reminded me of summers at my abuelitas house. I used mexican queso fresco (Cacique Brand) because that's what I remember my granma using. Other than that I followed the recipe exactly. Finally, a trully authentic Mexican recipe just like my granmas!!!!

The Best Rolled Sugar Cookies

Very good, moist cookies. I was out of butter so I used margarine. The dough turned out slightly sticky and I could not roll the dough without making a big sticky mess so I spooned it them out into the cookie sheet. They still came out very soft and lightly sweet. My husband thought they were a little plain but my six year old and his friend thought they were good. I thought they were perfectly soft and delicately sweet.

Mexican Pinto Beans

It really is easier to just not change the water again, but you might get a slightly less appealing looking broth. The other thing is that these are not "refried beans", so if that's what you are looking for you wont get with this recipe. One suggestion though (from a Mexican), follow these directions as they are. Once you have your cooked beans, take a skillet and pour some oil (maybe about 1/4 cup) heat the oil and take beans from the pot (drain the liquid first) and fry them in the oil. Mash them up while they are frying. You could also stir in some milk for a creamier texture.

Anaheim Fish Tacos

These are very tasty! Although I agree with a few people that it was soupy, all you need to do is drain the liquid before serving. I did omit the leak and used onions instead and I used jalapenos instead of anaheim chiles as well.

Soft Sugar Cookies IV

Excellent, delicious, soft and chewy cookies. I had a lot of fun making these as well. The butter, sugar, and shortening come together with the flour mixture as a very soft and pillowy mixture. My son and husband devoured these wonderful cookies.

New York Cheesecake III

I made this cheesecake to use up some leftover packages of cream cheese. I had to cut the recipe in half though because I only had two 8 ounce packages. It turned out amazing. I followed all the directions exactly and the next morning half the cake was gone because my hubby ate it in the middle of the night!!!

Refried Beans Without the Refry

I didnt mash these up as the recipe instructed, I decided to keep them as frijoles de la hoya. The taste was very authentic and traditional without all the work of having to keep on eye of the pot of beans. It was much easier to make them in the slow cooker. I cooked them overnight and the beans were very tender. I made huevos rancheros for breakfast and served the beans as a side dish topping them with cotija cheese. My hubby gobbled them up with tortillas and salsa ranchera. Awesome recipe! Thanks for sharing!

Homemade Chicken Soup

I made this soup to prepare myself (and my family) for when I return home from having surgery(I wanted something wholesome and easy to store and reheat for us to be able to have for dinner/lunch for a couple of days). I didnt add the vegetables until perhaps the last 20 minutes of cooking because I didnt want them to be too mushy. I used baby carrots, used skinless chicken breast, and added chopped tomatoes. The soup turned out very delicious and satisfying. Even my picky 6 year old liked it and ate the carrots. I made some simple mexican rice and served over the soup. Very filling and tasty.

Buffalo Chicken Strips II

Kori's Whole Wheat Cookies

Yummy! I substituted the sugar for splenda and used margarine instead of butter since it was all I had. I also added a tablespoon of cinnamon to the recipe. These turned out not too sweet and very moist.

Slow-Cooker Barbecue Ribs

Although I liked that the meat was very tender and falling off the bone I was not to pleased with the taste. I ended up adding 1/4 cup of brown sugar more and cooking for approx 30 minutes extra to try to improve the taste. My hubby loved these and could not get enough of the meat, but I am sorry to say I cant say the same. I think nextime I will use bbq sauce instead the chili sauce and add some onions/garlic to the recipe. Thanks for sharing though, the hubby still enjoyed his dinner!

Breakfast Enchiladas

I was not impressed with these at all. They seemed to be missing something. I think I was expecting a more traditional enchilada flavor to them. The flour tortillas got really saugy and sticky. If I decide to try this again I will use corn tortillas lightly fried in oil instead. Maybe I will add some egg as well.

Whole Wheat Blueberry Pancakes

I made this as a healthy breakfast for my very picky 6 year old who will refuse to eat anything that seems to be remotely good for him. I used a tablespoon of splenda in the mix. My son ate two whole pancakes and kept saying how much better these are than the one's mommy makes from the red box (Aunt Jemima). This will definately become a Saturday morning ritual at our house. Thanks so much for sharing!

Jimmy Dean Sausage Spinach Stuffed Mushrooms
