Viva Madrid Spanish Chicken

I followed all the steps except the dredging in flour. I used chicken leg quarters because that's what I had. I finished it off in the slow cooker on high for 4 hours and it was magnificent! I also added some smoked paprika.

Mexican Rice III

Pupusas de Queso (Cheese-Stuffed Tortillas)

My mom's friend owns and operates a pupuseria in L.A. She shared with us that to keep the pupusas from drying out or being too dry she adds one tablespoon of baking powder to the masa harina before adding the water. She adds a little salt as well. I have to say, adding baking powder made a HUGE difference in the consistency of the masa. I used cooking spray on the skillet before cooking and they turned out fantastic.

Baked Eggplant Parmesan

I carelessly misread the steps to this recipe and ended up breading the eggplant slices, then layering them and baking completely skipping the baking the eggplant on its own first. Nevertheless, the dish was delicious and the whole family enjoyed it. I'll follow the steps exactly next time.

Real Homemade Tamales

This was a great basic recipe. I used store bought prepared masa (from the Mexican supermarket) and cooked the pork as directed but added cumin, black pepper, salt, bay leaf and more garlic to the cooking water. I also seasoned the chile sauce with cumin, black pepper and onion powder. My hubby and I had our own little "tamalada" and spent an hour or so assembling these. It was fun.

Brown Sugar Meatloaf

Wow! Absolutely the best and most moist meatloaf I have ever had. I substituted the bread crumbs for oatmeal since it was all I had on hand and it was still FABULOUS! I also squirted about a tbs of ketchup into the mix with a sprinkle of brown sugar. Yum!

Chicken Fajita Marinade

This marinade made my chicken very tender and juicy. The flavor was light and delicious but I felt that it needed a little more "oomph". Maybe some more cumin and some onion powder would have done the trick. I will definately try this again with a few adjustments.

Italian Pasta Salad I

This was so versalite! I love it. I adjusted my salad based on what I had on hand. I used the two dressings, chopped white onions, cucumbers, chopped tomatoes, celery, kalamata olives and whole wheat spaghetti (broken into pieces). It was so light and delicious. Perfect for a hot day like today.

Chorizo Breakfast Burritos

My family is Mexican so we grow up eating chorizo and eggs regularly and I have to say I have never had chorizo with onions and eggs. I thought it was delicious! I use soy chorizo now that I am grown since it is less fatty. My husband loved this (although we did not serve it as burritos, we made tacos instead using corn tortillas). I used about 1/4 less of the chorizo than called for since we made used some earlier in the week. It was great!
