Squash Casserole II

Nearly perfect and hands down better than the more popular recipe. I didn't have the onions and it was still great. Next time I'll add a little black pepper because that is how my Granny did it. Thank you for the recipe! (new readers please note that boiling/steaming and draining the squash is necessary or you will have a very runny casserole.)

Swiss Cheese 'n' Onion Quiche

Good basic recipe. I cooked in a 9" Pyrex glass pie pan and it was the perfect amount of filling. No spilling over at all. The onions are nice and sweet. Great with the Swiss cheese.

Cider-Roasted Chicken

It was good but the cooking time was too much for the chicken I cooked. It turned out very dry and fell apart when I tried to remove it from the roasting pan. However, the bacon gave a nice flavor to the drippings. I will adjust the cooking time down next time and hope for better results.

Yogurt Chicken Curry

This recipe was easy. However, the curry taste was way too mild for my taste. I added a lot of extra curry and a dash of garam masala. I also added some steamed onions and peppers with success.

Danish Meatballs with Dill Sauce

Good. I used pre-packaged meatballs and I really think that fresh made meatballs would have made all the difference between good and great. Next time I will make the meatballs here.

Hudson's Baked Tilapia with Dill Sauce

I thought this was very good. I did make some adjustments, however. Because my family dislikes mayo, I substituted plain yogurt instead. I also added some lemon zest and MSG to the sauce. Served with steamed fresh green beans. Yummy!

Creamy Pea Soup

Pretty darn good! I substituted some water with chicken broth and only used half the cream cheese. Also didn't put it in the blender, I like it a little chunky. Very good for someone who always ruins pea soup!

Beware mayo haters! This recipe has a strong mayo taste so no one in my family liked it. I think it would fit our tastes if I completely substitute the mayo with cream cheese. I think that would be very tasty!

Blackberry Wine Cake II

Mine stuck so badly to my Nordicware non-stick bundt pan (which I had sprayed with Pam), that I could only get it out by digging with a spoon. What I could get out tasted very, very good but I'm very sad that I didn't get a nice cake out of it. I highly recommend greasing and flouring your pan even if yours is non-stick like mine. Great taste! Can't wait to try it again!

Real Italian Calzones

My husband made these and they were delish! I must say that one calzone would have been plenty for the two of us. They were VERY large. This was also his first attempt at a yeast bread and it came out perfect. I was very impressed! Good recipe, great instruction! Thanks!

Exquisite Pizza Sauce

Southwestern Grilled Chicken with Lime Butter

I give the lime-butter sauce five stars but the chicken itself only four. Because it was raining heavily when I made this, I could not grill the chicken. That may make a big difference in taste. Overall a very good tasting recipe although not "Southwestern" by my interpretation. I have no suggestions for changes and I will certainly make again but grill in order to make a more fair judgement of this recipe.

Barbecued Beef

Best I've ever had and very easy to make. I made no adjustments to the sauce at all and served on some leftover pork roast. I can imagine that this would be great on all meats and on the grill. I'm kissing goodbye to storebought sauces. Thanks, Corwynn!

Banana Bread II

This is my favorite banana bread recipe I have ever used! Instead of 1 cup banana, I used 3 whole bananas. I use 1/3c white and 1/3c brown sugars. And I add 1 tsp. vanilla, 1 tsp. cinnamon, 1/2 tsp. nutmeg, and 1/2c cream as per other reviewers. Very tasty!

Apple Crisp I

Great! I didn't have any instant oatmeal so I used 1/2 cup rolled oats and 1/2 cup granola. Next time I'll add 2 pinches of salt, but that is just my personal preference. The walnuts and maple really made this! I served this with vanilla ice cream. YUM! Thanks, Gracia!

Real Southern Cornbread

The crust formed by following this recipe is fantastic. Still, this is not The One. Needs more salt, I think. I cut the recipe in half and cooked/baked in an 8x8 pan and that was just the right size for about 6 very large servings or 9 regular size servings.
