Cheese Lover's Tuna Casserole

This was really easy to make and my husband loved it. I did however, change it just a bit. I added some diced onion and 1 tsp. lemon pepper for extra flavor; reduced the cheese to 12 oz, which was plenty; and used cream of celery soup. My husband said it was great but could be a bit creamier, so next time, I might add 1 more can of soup, or maybe try adding 1/2 can of milk to the mixture.

Turkey and Stuffing Casserole

This recipe turned out great. My husband loves casseroles made with stuffing, and this has now become his favorite. It was very easy to make, with cubed chicken that I had on hand. I also skipped the suggested seasoning, and just used 2 boxes of Stovetop Stuffing mix, as I didn't have any other on hand. Love quick and easy casseroles, and this one will stay on my top 10 list!

Blueberry Coffee Cake I

I made this receipe New Year's Day, and it was fabulous, it was very moist and had great texture! I used 6 oz. of milk instead of the 1/2 c. and used 2 cups of thawed, frozen mixed berries that I keep on hand from Costco. I also reduced the crumb topping by half and was glad I did as there was plenty of topping to cover the square baking dish that I used. I found that it was done in about 45 minutes, since I used a glass dish. I will definitely make this again, and probably try using a 13" baking dish and doubling the recipe for company. This will become one of my new favorite brunch recipes!

Baked Omelet Roll

My first attempt at this recipe didn't work out so well. I love the simplicity of blending the ingredients together and baking but will try adjusting a few things next time. I used a glass baking dish, and I think the oven temp. was too high, as my eggs stuck to the bottom, even after using cooking spray. I think I'll try baking at 375 for about 15 minutes next time. Also, I think I will try reducing the flour down to 2-3 T. since the 1/4 c. I used still seemed to taste to "floury". I also plan to increase the amount of seasoning I use, as it was still a little bland for my taste. I'm looking forward to trying this again, as it will be a quick and easy weekend breakfast idea, as well as very versatile.

Orange Cream Fruit Salad

This has become our family favorite this summer! I've found it is a great salad to make in advance for parties. I drain the fruit overnight in the fridge and prepare the pudding in advance for convenience, then mix the two together and chill before the event. I've also used Orange sugar-free espresso syrup in place of the orange juice concentrate for convenience and it turned out great!
