Easy Salmon

I'm still having trouble with how easy this was! It took me five minutes, literally, to prep this dish and get it into the oven. I used fresh squeezed lemon juice and it was wonderful. My friend complimented the meal three times - I will definitely be putting this one in my recipe box. Thank you Christine.

Baked Slow Cooker Chicken

This couldn't have been easier or juicier! I followed others' examples and used cut up onions and potatoes instead of tin foil. I also cut up an apple that had been laying around my kitchen and it added a nice subtle sweetness. I used Ms.Dash, seasonal all, and S&P to season it. I also sprayed the whole concoction with butter flavored cooking spray. I only cooked chicken thighs and so reduced my cooking time: 45 minutes on high, 3.5 hours on low, then just kept it warm until dinner time. It was wonderful!! Thank you Cotton!!

Microwave Corn on the Cob

I removed the silks but left the cobs in the shucks. I wrapped each one in damp cheesecloth and nuked three at a time for 10 minutes, rotating halfway through. They turned out great!

Laura's Quick Slow Cooker Turkey Chili

Great recipe! I subbed a can of navy beans for the black beans (it's what I had on hand), only used 1 can of kidney, and substituted a can of diced tomatoes for one can of soup. My boyfriend and I both loved this but we didn't find it to be spicy in the least. Maybe it's the Texan in us but we both thought it was pretty mild. I'll definitely make it again but next time I'll add a bit more spice.

Cream Cheese Penguins

Absolutely precious!!! A bit messy to make, but well worth it. I used 1.5 containers of low fat cream cheese and mixed it with a package of herb and garlic salad dressing seasoning. The assembly was super easy, except for the noses - I had trouble getting small enough triangles that weren't too thick to break open the face.

Saltine Toffee Cookies

I was dubious about the idea of saltines and toffee, but am I ever glad that I gave this recipe a try!!! It's fantastic! I took some over to my friend's house and she keeps asking me to bring it back. A word of caution - this is NOT a recipe for those opposed to super sweet treats.

French Silk Chocolate Pie II

I made this pie using Splenda, EggBeaters, and a reduced fat graham cracker crust. I used real butter. The pie turned out very thick and creamy, which was wonderful. Unfortunately, it had a strong butter taste to it, even though I had taken JOSIE's suggestion and increased the cocoa by about 1.5 tbsp. I can see excellent potential in this pie though, and will definitely make it again, but reduce the butter to just 1/2 cup. I can't wait to taste the next one!!

Bob's Awesome Lasagna

I made this with ground lean turkey, low fat Ricotta cheese, and shredded romano to cut down on the calories. I also scaled it down to 4 servings b/c it was just me and my boyfriend. We both loved it!! Easy and tasty!

Cherry Cheese Pie I

Wonderful! I used fat free cream cheese, Splenda, fat free Cool hip and sugar free cherry pie filling. By my calculations I cut the calories per slice in half (400 to 202 per). It came out beautifully and tasted wonderful!

Kitty Litter Cake

I gave this to a cat-loving friend for her birthday and it was a great hit. I wrapped the box up like a gift and had her open up the scooper first so that she'd think it was a box of cat toys. The best reaction was from the waiter at the restaurant when he looked and saw it on the table!!

Barbecue Beef Cups

Super easy and great to eat. I used ground turkey and browned it with chopped onion. Stubb's BBQ sauce gave them a great flavor. My dad loved them and ate 4 - he usually hates ground turkey. I made 8 with Grand's and used up the remaining meat with four pieces of bread. They all turned out great.

Beth's Spicy Oatmeal Raisin Cookies

I doubled this recipe so that I could give them out with other cookies at Christmas. All of my friends heard rave reviews about these cookies....unfortunately, none of them got to find out for themselves b/c my boyfriend and I ate them ALL! Absolutely the best oatmeal cookie I have ever eaten. Beth, you deserve a medal.

Martha Washington Cookies

Awesome cookies! I used Eggwhites and had trouble with getting a the mixture to stiffen, and so my consistency reminded me a bit of peanut brittle. BUT, the cookies were still awesome tasting and this recipe will be introduced to my cookie colelction.

Brown Sugar Meatloaf

I'm new to cooking and had never made meatloaf before. My boyfriend, who's been only moderately enthusiastic about my attempts at dinner thus far, was thrilled with this meal and ate two servings in 10 minutes! I loved it too.
