Hash Brown Casserole for the Slow Cooker

Very good! I gave this a 4 only because all of the cheese was a bit overwhelming. Next time I'll either add some meat to it and make it into a main dish or scale back on the sour cream.

Cherry Cheese Pie I

Wonderful! I used fat free cream cheese, Splenda, fat free Cool hip and sugar free cherry pie filling. By my calculations I cut the calories per slice in half (400 to 202 per). It came out beautifully and tasted wonderful!

Earthquake Cookies

Great cookies! I preheated my oven (I assumed I was supposed to) and didn't have any problems. The batter is VERY thick so definitely use only a spoon to mix it, or be ready to scrap your beaters. Bake them until the sugar has almost disappeared and they'll be perfect.

Chocolate Chip Meringue Drops

I GIVE UP!! I've tried to make these cookies three times now and each time they've turned out horrible. I beat the hell out of the eggs (pardon my french), I tried adding cream of tartar and salt, I tried real eggs and fake egg whites - all to no avail. Please help me, I want a 22 calorie cookie!!!

Martha Washington Cookies

Awesome cookies! I used Eggwhites and had trouble with getting a the mixture to stiffen, and so my consistency reminded me a bit of peanut brittle. BUT, the cookies were still awesome tasting and this recipe will be introduced to my cookie colelction.

Easy Lemon Chiffon Pie

This recipe was super easy and tasted ok, but basically amounted to flavored cool whip with a crust. I think next time I'll add some cream to make it a bit thicker. I did love how easy this pie was to reduce the calories in though!

Baked Slow Cooker Chicken

This couldn't have been easier or juicier! I followed others' examples and used cut up onions and potatoes instead of tin foil. I also cut up an apple that had been laying around my kitchen and it added a nice subtle sweetness. I used Ms.Dash, seasonal all, and S&P to season it. I also sprayed the whole concoction with butter flavored cooking spray. I only cooked chicken thighs and so reduced my cooking time: 45 minutes on high, 3.5 hours on low, then just kept it warm until dinner time. It was wonderful!! Thank you Cotton!!

Easy Salmon

I'm still having trouble with how easy this was! It took me five minutes, literally, to prep this dish and get it into the oven. I used fresh squeezed lemon juice and it was wonderful. My friend complimented the meal three times - I will definitely be putting this one in my recipe box. Thank you Christine.

Kitty Litter Cake

I gave this to a cat-loving friend for her birthday and it was a great hit. I wrapped the box up like a gift and had her open up the scooper first so that she'd think it was a box of cat toys. The best reaction was from the waiter at the restaurant when he looked and saw it on the table!!

Cream Cheese Penguins

Absolutely precious!!! A bit messy to make, but well worth it. I used 1.5 containers of low fat cream cheese and mixed it with a package of herb and garlic salad dressing seasoning. The assembly was super easy, except for the noses - I had trouble getting small enough triangles that weren't too thick to break open the face.

Applesauce Sandwich

I added cinnamon and Splenda to the applesauce, and then drizzled honey on the "pie" and it still tasted like warm mush. Maybe for kids, and maybe as a last resort on a diet - otherwise, I didn't like it.

Bob's Awesome Lasagna

I made this with ground lean turkey, low fat Ricotta cheese, and shredded romano to cut down on the calories. I also scaled it down to 4 servings b/c it was just me and my boyfriend. We both loved it!! Easy and tasty!

King Ranch Chicken Casserole III

It was a little too limp for me - next time I'll use chips as others have tried. I'll also add much more spice - the mushroom and chicken cream was a little overpowered the chili and I want more flavor. But still good.

No Bake Sugar Free Cheese Cake

Eh...it was a bit bland for me. I used a 3 oz box of sugar free lime jello so maybe that's why it was lacking in the flavor department. Also, it wasn't as creamy as I was hoping - more like a whipped pie than cheese cake.

Microwave Corn on the Cob

I removed the silks but left the cobs in the shucks. I wrapped each one in damp cheesecloth and nuked three at a time for 10 minutes, rotating halfway through. They turned out great!

Beth's Spicy Oatmeal Raisin Cookies

I doubled this recipe so that I could give them out with other cookies at Christmas. All of my friends heard rave reviews about these cookies....unfortunately, none of them got to find out for themselves b/c my boyfriend and I ate them ALL! Absolutely the best oatmeal cookie I have ever eaten. Beth, you deserve a medal.

Self-Filled Cupcakes I

FANTASTIC! I cut the calories by using fat free cream cheese and substituting applesauce for the oil. I also used yellow cake. They baked up perfectly. I will definitely make these again.

Chocolate Chip Pumpkin Bread

I used Splenda, Eggbeaters and 1/4 cup applesauce for part of the oil. It turned out great - VERY moist and flavorful. I made three loaves in 7x3 disposable pans and didn't have any trouble with them rising. It was a bit strong on the nutmeg, but otherwise good.

Healthy Banana Cookies

The cookies were VERY moist and easy to make, but the actual consistency seemed a bit soggy. Next time I would add more oats, as well as MUCH more cinnamon and nutmeg b/c the taste was a bit lacking. Overall, though, a good cookie that I enjoyed eating.
