Brown Sugar Meatloaf

Reviewed: Oct. 23, 2004
I'm new to cooking and had never made meatloaf before. My boyfriend, who's been only moderately enthusiastic about my attempts at dinner thus far, was thrilled with this meal and ate two servings in 10 minutes! I loved it too.

Urban Legend Chocolate Chip Cookies

Reviewed: Oct. 23, 2004
I don't get it. These cookies didn't turn out at all. When I was mixing up the batter, my beaters actually got clogged and I had to scrape it out from inside them. The cookies didn't harden, spread, or even budge while baking. My boyfriend tried one and actually had trouble swallowing. What did I do wrong?

Lemonade Pie III

Reviewed: Oct. 25, 2004
I used fat free everything, but ran into a problem with the juice concentrate. Instead of lemonade, I used fruit punch, and like many others I could only locate the 11 ounce can. I used just half of it, but the pie still came out WAY too sweet. I'd try it again but use MUCH less concentrate, because even with all the sweetness the potential for a fabulous dessert was obviuos.

Bob's Awesome Lasagna

Reviewed: Oct. 26, 2004
I made this with ground lean turkey, low fat Ricotta cheese, and shredded romano to cut down on the calories. I also scaled it down to 4 servings b/c it was just me and my boyfriend. We both loved it!! Easy and tasty!

French Silk Chocolate Pie II

Reviewed: Oct. 26, 2004
I made this pie using Splenda, EggBeaters, and a reduced fat graham cracker crust. I used real butter. The pie turned out very thick and creamy, which was wonderful. Unfortunately, it had a strong butter taste to it, even though I had taken JOSIE's suggestion and increased the cocoa by about 1.5 tbsp. I can see excellent potential in this pie though, and will definitely make it again, but reduce the butter to just 1/2 cup. I can't wait to taste the next one!!

Chocolate Chip Meringue Drops

Reviewed: Oct. 27, 2004
I GIVE UP!! I've tried to make these cookies three times now and each time they've turned out horrible. I beat the hell out of the eggs (pardon my french), I tried adding cream of tartar and salt, I tried real eggs and fake egg whites - all to no avail. Please help me, I want a 22 calorie cookie!!!

Baked Slow Cooker Chicken

Reviewed: Oct. 28, 2004
This couldn't have been easier or juicier! I followed others' examples and used cut up onions and potatoes instead of tin foil. I also cut up an apple that had been laying around my kitchen and it added a nice subtle sweetness. I used Ms.Dash, seasonal all, and S&P to season it. I also sprayed the whole concoction with butter flavored cooking spray. I only cooked chicken thighs and so reduced my cooking time: 45 minutes on high, 3.5 hours on low, then just kept it warm until dinner time. It was wonderful!! Thank you Cotton!!

Make-Ahead Mashed Potatoes

Reviewed: Nov. 1, 2004
This dish was very good, but the Southern soul inside of me couldn't understand why I was eating unbuttered potatoes. =)

Chicken Enchiladas I

Reviewed: Nov. 4, 2004
I loved how easy it was to reduce the calories in this recipe (I used fat free cheese, fat free sour cream, and low carb wheat tortillas). I took others' tips and left out the water, as well as reducing the tomato paste. It came out great! Easy to roll up and flavorful (I used red pepper flakes and it had plenty of zing). I also used enchilada sauce to make it more authentic. Overall, nice taste and appearance, even for a Texan. The only thing I truly didn't like were the onions.

Cake Mix Cookies VII

Reviewed: Nov. 7, 2004
Wonderful! I used yellow cake, chocolate chips and copped pecans. I was able to get 41 good sized cookies out of this, thus reducing the calories per cookie. =)

Healthy Banana Cookies

Reviewed: Nov. 7, 2004
The cookies were VERY moist and easy to make, but the actual consistency seemed a bit soggy. Next time I would add more oats, as well as MUCH more cinnamon and nutmeg b/c the taste was a bit lacking. Overall, though, a good cookie that I enjoyed eating.

Martha Washington Cookies

Reviewed: Nov. 7, 2004
Awesome cookies! I used Eggwhites and had trouble with getting a the mixture to stiffen, and so my consistency reminded me a bit of peanut brittle. BUT, the cookies were still awesome tasting and this recipe will be introduced to my cookie colelction.

Cherry Cheese Pie I

Reviewed: Nov. 10, 2004
Wonderful! I used fat free cream cheese, Splenda, fat free Cool hip and sugar free cherry pie filling. By my calculations I cut the calories per slice in half (400 to 202 per). It came out beautifully and tasted wonderful!

Awesome Slow Cooker Pot Roast

Great taste, but mine came out just a tiny bit dry. I would add more water. Otherwise, a wonderful flavor and easy setup.

Chocolate Chip Pumpkin Bread

Reviewed: Nov. 11, 2004
I used Splenda, Eggbeaters and 1/4 cup applesauce for part of the oil. It turned out great - VERY moist and flavorful. I made three loaves in 7x3 disposable pans and didn't have any trouble with them rising. It was a bit strong on the nutmeg, but otherwise good.

FANTASTIC! I cut the calories by using fat free cream cheese and substituting applesauce for the oil. I also used yellow cake. They baked up perfectly. I will definitely make these again.

Chili Dog Casserole I

Reviewed: Nov. 23, 2004
I didn't have buns, so I used toasted bread. I also used fat-free franks, fat-free cheese, and turkey chili to reduce the calories. This was an easy meal and a good taste, but I think I prefer regular chili dogs.

Saltine Toffee Cookies

Reviewed: Dec. 1, 2004
I was dubious about the idea of saltines and toffee, but am I ever glad that I gave this recipe a try!!! It's fantastic! I took some over to my friend's house and she keeps asking me to bring it back. A word of caution - this is NOT a recipe for those opposed to super sweet treats.
