About this Cook
I always loved to bake but since my back surgeries, I just cant do like I use to. After gaining alot of weight and not being able to exercise, I was desperate to start cooking in a way that I could drop some pounds. Low carb worked best for me and has helped me to lose all my weight. Ive experimented with many traditional recipes by altering sugar and flour contents with stevia or brown sugar blends, and flour by using vegetable protein, ground flax, coconut flour and other options. My mainstays are, real butter, pure vanilla and free roaming eggs from my feathered girls. Being post menopausal with a slow metabolism, eating to lose has always been a challenge for me. I do have indulgences from time to time and when I do, I go all out. I really appreciate allrecipes and have found many great recipes here. I hope you enjoy this site as much as I do. cut out sugar cookies at Christmas. Pecan pie Homemade soups and chili in the Fall. Fall desserts using fresh fruits and vegetables from our garden.

My cooking tragedies
Ive been pretty lucky with my cooking expeditions but I did make some of the sickest sugar free fudge last year. Im not sure what I did but it tasted so bad that I havent had the urge to experiment down that road again, probably could have used it as some kind of rodent or animal deterrent . I guess some recipes just cant be altered and still taste good.

Butternut Squash Casserole
I made this for a hayride party last night and had many requests for the recipe. I made some alterations only because I did not have all the ingredients on hand and it was delicious.. Instead of vanilla waffers, I used quick cooking oatmeal. Splenda brown sugar and real butter. Also have free roaming chickens so the eggs are always richer. What a hit this was. My butternut squash was home grown so I have enough to make more. Thanks allrecipes for this wonderful fall recipe.
